measuring ingredients for Annie's salsa...or any canning recipes

Hello experts,

I have to admit, I never really thought much about measuring until I read a thread awhile back asking about if you chop or drain first or measure then chop.

I'm finally ready to can Annie's salsa. Most of the ingredients will come from my garden which is very exciting! hot and sweet peppers, garlic, and tomatoes from garden.

I had to buy onions even though I tried to grow them.

First, I apologize for another Annie's post, but think of it as a "measuring" question.

Can we please discuss how to measure the following ingredients:

8 cups tomatoes, peeled, chopped and drained

2 1/2 cups chopped onion

1 1/2 cups chopped green pepper

3 - 5 chopped jalapenos

1/4 cup chopped fresh cilantro
