Found the recipe in the Relish supplement last week. Is 1 cup vinegar adequate for processing in a BWB?

I would not hesitate to can this pepper jam and may even try it. My recipe has 3 sugar 2 vinegar and no pectin. Also, my peppers aren't roasted.

questions:
-is the vodka part of the necessary acid content (since straight vodka is flavorless)
-any problem with using a flavored vodka -- maybe pepper flavored for an extra kick?
-any problem with using fresh lime juice?

Linda, Yes I did leave chunks in the pepper spread, almost a 1/3 of the batch I chopped up, the rest I pureed. Duh, I didn't even think of that. I guess I'm just paranoid because I know I weighed 9 cubanel (sp?) red peppers at 3.3 lbs and then went to the store and bought more red peppers there. I can't remember if I weighed them or what the weight was, but I know I weighed the tomatoes. (smacks head) Sigh, and I know I won't be comfortable unless I know EXACTLY what I did. What a pain...I have 7 beautiful, sealed jars that I want to put on my shelf or give one or two to someone, but I won't take them out of the fridge because I can't remember what I did. Oh well, maybe I'll make some hummus and bring it into work. Lesson learned. It sucks getting old and forgetting things. :-(

Melly, I never bought the H&D's. My daughter buys it at the outlet in Myrtle Beach whenever she visits there. Last fall I tried to duplicate it and thought I came very close. I probably cooked it too long as it was quite thick. I followed my Pepper Jam recipe and made a few changes. First I'll give the recipe and then the changes I made to get it somewhere like H&D's. Red Pepper Jam 10-12 large red bell peppers 1 tbls. canning salt 2 cups white vinegar 3 cups sugar Remove seeds from peppers and pulse in food processor. This step takes only a few seconds. Place contents in a bowl and sprinkle with salt. Let stand 3 hours. [one hour is plenty if you stir occasionally] Drain. Add sugar and vinegar; Cook slowly until thick, about 45 minutes. You can speed this process by cooking in two shallow pans rather than a deep pot. When thick as you like, place in sterile 8oz or 4oz jars. Adjust lids and process 10 minutes in a HWB. For the H&D taste alike, cut all peppers with a knife. If you use a food processor you will have a horrible green mess. You want to see red, green and yellow 1/3 inch pieces in your relish. Add 3 or 4 hot peppers [I used green jalapenos] or to your liking. Leave some seeds. Dice 1 medium onion the same size as the peppers. I substituted 2 yellow bells for two of the reds. I didn't add the tomatoes as I only had fresh and I know they would disappear in the mix. A seeded Roma may work or even a can of store diced tomatoes, drained. I know the canned diced hold their shape well. Place all in bowl add salt and proceed. You should get 7 or 8 half pint jars. Shirley

I'm not sure which red pepper relish that might be. Here are some possibilities, though neither one calls for ground peppers: Ruthanna's pepper relish has been mentioned on this Forum but appeared on Cooking. Ruthanna's PA Sweet Pepper Relish 12 large red peppers 3 Tbs. salt 6 large tomatoes, peeled, seeded and chopped 2 large onions, chopped fine (about 2 cups) 3 cups sugar 1 cup cider vinegar 2 Tbs. mixed pickling spices Halve, seed, and chop peppers. (You should have 9 cups.) Layer with salt in a large glass bowl. Allow to stand at room temperature, stirring several times, 3 hours. Drain peppers well to remove all liquid. (best to squeeze out moisture with your hands) Combine drained peppers, tomatoes and onions in a large kettle Â not aluminum.; stir in sugar and vinegar. Tie spices in cheesecloth and crack with a hammer. Add bag to kettle. Bring to boiling, stirring often. Lower heat; simmer 30 to 90 minutes or until mixture thickens, stirring frequently near the end of cooking time to prevent scorching. Time will depend on juiciness of tomatoes but you want it nice and thick. Remove spice bag. Ladle into sterilized jars (1/2" head space) and process in hot water bath for 10 minutes. Makes 6 to 8 (8 oz.) jars. Ruthanna, Cooking Forum Another good possibility is shirleywny5's Pepper and Onion Relish. Melly also made this recipe and said it was excellent. Shirley's H & D Taste-Alike "I used my Cuisinart to chop all the peppers. Tomatoes were peeled, seeded and diced very small. The onion was diced using the Julienne blade of my V-slicer." 12 med Red bell peppers 10 jalapenos 5 assorted green, yellow or red hot peppers 5 large plum tomatoes 1 large onion. Any kind will do. 2 cups white vinegar 3 cups granulated sugar Remove seeds and white membrane from red peppers Remove HALF the seeds from the jalapenos Remove half the seeds from the other hots. Chop peppers in food processor Place in bowl with prepared tomatoes and onion. Sprinkle with 1 Tbls. canning salt. Let stand about 1 hour. Drain off liquid. I use my quart capacity strainer with a handle. The holes are smaller than my colander. You don't want any of the small pepper pieces falling through. Place peppers, onions and tomatoes in cooking pot and add sugar and vinegar. Cook over medium heat until thick as you like. Usually 30 or 45 minutes is plenty. You can almost tell by the texture. Ladle into jam jars and seal. Process 20 minutes in Hot water bath. Someone else may have another red pepper relish I've forgotten that will fit the bill. Carol

louise, in case Sharon doesn't come back soon, here is the one I have. She gave it to me when Elery and I visited her in Toronto: Roasted Red Pepper Soup Source: Sharon(chase) 4 Red Bell Peppers,roasted, seeded and peeled 2 TBSP Butter (or margarine) 1 Red onion,chopped 2 Garlic cloves,minced 4 cups Chicken broth 1 TBSP Lemon Juice Salt & Pepper to taste Saute onions and garlic in butter until soft. Add red peppers. Cook for 2 or 3 minutes. Add broth cover and simmer for 20 minutes. Add lemon juice. Process in food processoe until smooth. Season with salt and pepper. Place back on stove until ready to serve. NOTE: To roast the peppers place whole peppers under the broiler or on a hot grill. Turn peppers until blackened on all sides. Place hot peppers in a plastic bag and tie shut. When the peppers have cooled completely remove from the bag. Remove all the skin and seeds. I don't see why jarred roasted red peppers wouldn't work, although the flavor might not be as sweet as red bell peppers. Annie

I anyone else having problems with that link? I get a heading and ads but the main part of the page is blank... then I searched for the name of the recipe & it shows up in a list but when I try to open it I get that mostly blank page again... I can't get ANY of the recipes to display...

After you get to the page you must search for Roasted red pepper jam. Upper right of the page.

I did the search and it showed up in the list of hits but when I click or try to open it the column on the right and the pic of someone rolling dough and below that I get "Your search for view found did not find any results. Try searching again using different keywords" with everything else below it blank. So I tried clicking on other recipes and same thing. Then I click on the Free Recipes link directly under the logo and a search box opens, farther down you can narrow it down to recipes by category or ingredients... so I click on Tomato Recipes... it lists a bunch of them... I click on #4 "Beef & Cheese Tamale Pie" and I get that blank page again with "Your search for view found did not find any results. Try searching again using different keywords" !!!

Soooo... I click on Food Festivals-Before you go" on the right and it lists a bunch of them, plus some links, one for "Green Chile and Mango Salsa" so I click it and get the blank page with "Your search for view found did not find any results. Try searching again using different keywords."!!!!

I found it by clicking on Articles ... earlier today I printed it by clicking on "printer friendly" ... this afternoon I had to copy and paste

Roasted Red Pepper Jam with a Kick
Ingredients:
2 1/2 cups finely chopped, roasted, cored and peeled red bell pepper
Â¼ cup finely chopped hot red pepper
(Thai or jalapeÃ±o)
1 cup white vinegar
Â½ cup vodka
1 tablespoon lime juice
1 teaspoon lime zest
Â½ teaspoon salt
4 cups sugar
1 (1 3â4-ounce) package reduced sugar fruit pectin

Instructions
1. Combine all ingredients in a pot over high heat and bring to a boil. Boil 5 minutes, skim foam off the top. Reduce heat. Ladle into sterilized jars. Place sealed jars into boiling water for 15 minutes. Let cool 24 hours. Makes 7 cups.
