canning sausage meat

My MIL made a delicious sausage meat that she canned. I never saw her make it but my husband says she packed the raw, ground meat in the jars (appparently she used beef and pork) and then put them in a boiling water bath. She made it this way for years. Is this an acceptable, safe method for canning meat? I don't know how long she boiled the jars and I was concerned about any health issues that might develop from this. Any advice? Marg
