They should be fine. Try placing a folded towel down and gently tapping them down to see if the gaps fill in. That may work.

Perhaps the filling is a bit thick. Sometimes when I can apple products, even though the apples were blanched or precooked, they tend to swell up in the jars. I had that happen with a few jars of apple relish.
I cut back on the Clear jel when I make pie filling.

Thanks Linda, I did cut back on the clear jel also. The jars are sealed they are down in the center, but the filling is right up to the lid, I'll try to tap them down and see if that helps,The outside of the jar at the top is sticky so I know some leaked out. I was extra careful to leave the right head space because when I did the blueberry filling it also went to the top of the jar, but I knew that I had filled those fuller then I should have. I just wasn't sure how tight of a seal I had on these, it is pretty thick but looks oh so good. The gaps aren't that big but the are noticeable. Thanks again

I canned seasoned crushed tomatos in July and August and i cant stop eating them late nights out of 15 jars i managed to open just 2 this month for the family. In August i want to the local farmers market and purchased a few jars of canned tomato sauce (3) and late nights ive been cooking fettuccine noodles with the tomato sauce, crushed tomatos,parmesan and romano cheese and a little mozzarella . I only make enough for me and it is always late night, IT IS SOOOOOOOOOO good i think it is killing me, i am eating it right now!!!!!
I never had this urge with Classico sauce. I have gone through too many jars to addmit. Is this what canning can do to a person or maybe it is just me. My daughter thinks that i am giving the jars away. I have not made my own sauce yet although i've mastered crushed tomatos ( so i think)i am not there yet lol.
Does anyone else finds themself late at night or just when thay are alone sneaking the "canned goods".
At one point i was eating the strawberry, fig and peach jam alone untill my son caught me and said "realy mom,i mean come on" on whole wheat toast its great and on bialeys but that i did stop. I never ate sooooo many tomatos in my life lolol

I keep eating my watermelon rind pickles. At first I didn't like them, they have a bitterness from soaking with lemon peels. After aging, I opened a jar and now I've been craving them constantly!
Recipe came from The Joy of Pickling.

My apples are foamy (from my tree, no idea what they are). If I don't make sure to bring them to a boil where it foams up big time, the apples will have too much air in them and foam up during the processing, so I end up with expanded apples and no head space and bubbles all over in the jar, and if I tip the jar, it appears as if there is no fluid in there at all.

And then when I open them, the apples collapse and look really funny - but they still work fine in pies and such. The good part is I can fit more canned apples in a pie, and then I don't' end up with that sunken, almost nothing there Apple Pie I end up if I use them raw.

When I am cooking these apples for sauce (quartered only) at one point they will expand up to about twice the amount as when raw. Then as they cook a bit more, they will de-gas and go back to looking like you would expect with apple sauce.

I've never canned any apples other than what I get off my tree so I don't know if this is normal for apples, or particular to what I have.
