persimmons!!!

From none last year(N.C), limbs are breaking from the weight this year. I put up 11... 2 cups each in freezer bags last night. Told some one today and was told they are not supposed to be harvested before the first frost..I have heard this before but never could tell the difference in a pudding.

Tell me your experiences and if you would your best recipes.The ones I picked up were 1 to 2 inches round. They were beautiful. Of course I had to fight the yellow jackets for them. LOL

Speaking of yellow jackets... why did God put the little beasts on earth?? They don't do honey....pollinate... Etc. The only reason I can think of is exersize..They keep your arms in shape by waving at them, while running!!

fedup - I'm near Concord NC. Picked up persimmons the other day and plan to work on them today. The limbs are breaking under the weight! Lots of persimmons!

Here is my favorite recipe. It's adapted from a recipe I got from Allrecipes.com.

Persimmon Bread

1 cup persimmon pulp
2 teaspoons baking soda
3 cups sugar
1 cup vegetable oil
4 eggs
1 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
1 1/2 teaspoons salt
2/3 cup water
3 cups all purpose flour
1 cup chopped walnuts (optional)
raisins (optional)

Preheat oven to 350 degrees. Grease four 6 x 3 loaf pans. (Original recipe calls for three loaf pans, but I have found that this recipe makes enough to fill four).

In small bowl, mix persimmon pulp and baking soda. Set aside for 5 minutes.

In large bowl, combine sugar, oil, eggs, cinnamon, nutmeg and salt. Blend. Mix in pulp, water, and flour alternating. Fold in nuts and/or raisins. Fill loaf pans 2/3 full.

Bake one hour or until toothpick comes out clean. Cool in pan for at least 10 minutes before transferring to cooling rack. Freezes well.

Very good - my kids love it. Hope someone posts a good tried and true persimmon pudding (I haven't quite perfected mine yet).

We always wait till after first light frost - mostly just because we learned that as kids. ;) I think it does make them a bit sweeter and the color a bit brighter. And less yellow jackets when it's that cool.

In addition to breads we like Persimmon jam and Raisin-Persimmon Cookies. They freeze well.

2 ripe persimmons, pureed
1 cup white sugar
1/2 cup butter
1 egg
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 cup chopped walnuts (optional)
1 c raisins

Preheat oven to 375 degrees F. Lightly grease cookie sheet. Combine flour, baking soda, cinnamon, cloves, nutmeg and salt. Cream the butter or margarine with the sugar. Beat in the egg and persimmons. Add the flour mixture and mix well then stir in the raisins and chopped nuts. Drop by teaspoonfuls, 2 inches apart, onto the cookie sheet. Bake at 375 degrees F for 12 to 15 minutes.

HELP! Persimmon tree keep dropping fruit!

I read an article in organic gardening years ago about monks beating the evil sprits out of orchard trees , they start older trees to begin to produce fruit again. I have seen more than one perfectly healthy persimmon tree drop its fruit, I had one that did this every year one year it had only two left on the tree and my wife decided to weed wack around the tree when she pulled the trigger the end of the machine came up and damaged the trunk of the tree i got to eat the last two persimmons. I think the trees will drop fruit in favor of growth ,when life is threadened it will hold them, after that i would wack the base of the tree of the with a pvc pipe only once or twice , you can easily over do it, it will bruse the cambibum layer cutting back and threating the life. most greatest need is to reproduce. af after that when i saw them start to drop i would wack the tree and it would hold the fruit

Yeah, I often pick them when they are just starting to turn color and they ripen on the window sill. I would always be trying to get to them before the squirrels. This year is the largest amount of fruit I've seen on this tree. This is only from one branch. There is so much more. Now I see I should have culled some of the fruit before it matured. Some of the lower branches are touching the ground. I can't reach the fruit on the top branches anymore. And I had the tree pruned by professionals this past winter! Hope your one persimmon turns into many in the years to come! That's certainly what happened to me.

I'm with Lucky when it comes to pushing the envelope of growing fruit trees. Trying out different approaches and perspectives, often challenging the rule of thumb, often growing what you're not supposed to. But this is backyard gardening, not a commercial fruit orchard operation. I myself take it as a risk taker approach. Let us say, you have 1 year in 5 that could wipe out your crop from the freezes, it would still be worth grafting the cultivar for me as I get 4 good years out of 5. But they are not necessarily in very regular intervals, it could be that the year you graft them is followed by the worst event of the time interval. Over here, it depends mostly on the hardiness of the crop cultivars. For example wih respect to citruses, we get a mild freeze once every five years, a moderate freeze once every ten years, and very severe freeze every twenty years or so, enough to wipe out most citrus crops in our area. I have more than 85 citrus cultivars and all have survived the moderate freeze, 20 deg F for at least a week with little help. Even if all of my citruses did die out, I'm more than glad to regraft or replant. I should get 19 good years out of 20. I guess, if you are enthusiastic about grafting like I do, I see such calamities as another opportunity to try out something new or repeat again thinking that you'll reap good crops in most years. When it comes to persimmons, you would just need a really cold hardy base cultivar to serve as your stock. Just know where to get good sources of scionwood. With my experience on persimmons, they can bloom and fruit the year they are grafted. The next year usually will have abundance of fruits after grafting. Thus if there is a freeze that could kill a grafted cultivar, and whose incidence is just once every 5 years, you should really try grafting and regrafting whenever needed. Never tire out, treat grafting like you are pruning. Pruning is a necessity every year, and so treat that grafting is a necessity to replace died out cultivars. Grafting unto mature trees will usually have your scionwood bear good quality fruits the next year after the operation. Thus a very cold hardy mature persimmon tree is a good investment, and then you can try out various cultivars on it.

I think the thing about frost and persimmons is just sort of an old wives tale, based on coincidental association == the persimmons get ripe around the time of the frost, therefore, it must be the frost that is doing it -- a slight lapse in logic, but understandable as a "rule of thumb".

Sort of the same thing about digging tender bulbs like Dahlias or even sweet potatoes -- conventional wisdom holds that you should only dig these after the frost has "hardened" them and killed the tops -- I doubt that these plants know or care about the frost, or that it does much for them, since they all come from the tropics where they never experienced frost. Who knows, perhaps it helps, perhaps its just myth? It doesn't seem to make much difference in my experience whether I dig them before or after a frost.

As long as the persimmons have lost their astringency, and are ripe/soft enough to suit you, it doesn't matter.

Yellow jackets DO pollinate many things -- they don't gather nectar for honey, but they do gather pollen. And, they control a lot of other insects like caterpillars, so they are good for something, but NOT when trying to pick fruit, have a picnic, or dig in your garden and stumble across a hive in the ground the hard way!

Persimmons are pretty interchangeable, IMO, in most any dessert or quickbread/muffin recipe calling for cooked pumpkin, winter squash, or mashed sweet potatoes. I made a persimmon pie once with my pumpkin pie recipe, and it was pretty much the same.
