Is mustard something you would can or just make and not worry about. I posted a thread: for those who like it hot: with the mustard recipe I use. With one mango I usually get 2 good jars of the mustard and it gets used up. But if I wanted to do batches...any ideas how to go about it?

Ingrediants are:

Hot peppers

garlic

lime juice

white vinegar

dijon mustard

olive oil

molasses

turmeric

salt

mango

I made a mustard pickle and it consists of ground up mustard seeds, vinegar, wine vinegar, salt, and a little tumeric for the yellow color. I used both yellow mustard seeds as well as brown mustard seeds which have more heat, as well as some ground mustard powder. For the pickle part, it was cut up cukes, a few sweet red peppers for color, whole small onions and some cauliflower pieces. The same veggies a sweet mixed would have. Because I had a lot of left over mustard sauce (thickened slightly with a little Clear Jel), I also made some hotdog relish with chopped onions and cukes. NO OILS should be used.

With the hot peppers, garlic, etc. it would not be safe to can. Especially with oil in it. You would need to freeze a recipe like that which is not designed nor tested for canning.

Some farmers use mustard plants as a green manure. When they plow them under, they may miss some (like along the fence lines) that flower and go to seed. The birds eat them, moisten and soften them in their digestive tract, and then drop them on your soil with a little blob of manure, and they sprout. If you deliberately want to grow condiment-type mustard, go to a grocery that sells bulk spices (Fred Meyer/Kroger) or a health food store and buy a spoonful of seed. It sounds too stark. In the same color range, I would go for a warm Camel color instead. Pair it with a soft Olive green to bring in a touch of nature and addtional softness. Then use the same tones in other accents and furnishings around the Living/Dining rooms to warm up the space and tie the areas together and make them feel cohesive. I had so much garlic mustard when we first moved to this house in 2016 (stilt grass too). I just kept walking around with black plastic garbage bags and pulling both of them up. I would just roll the stilt grass from one end to the other. Then I set a log line along the back of my property and kept at it every year. We relocated the log line further back and started clearing the woods little but little. I still get seedling in my yard but I pull them right away. My yard is pretty clear of them now but the woods behind me are still full of it. I increase the distance I pull each year but it's not my property so I can only venture so far before I end up in the neighbor's backyard.
