Comments (6)It isn't that you are wrong. Theoretically you are right. But theory and practice are two different things. HOW different they are is up to you. But that is why we have the guidelines. If you want to be absolutely, guaranteed safe then you (1) follow the approved recipe directions to the T because that is the way it was tested and approved, and (2) you never try to draw safety conclusions by comparing recipes because unless you are trained in food science you simply can't know all the interactions of the ingredients or the effect even a supposedly minor change will make. All you can do is guess and in general, guesses and safety don't go hand in hand. ;) That's if you want to be absolutely safe. But if you are comfortable with a degree of risk - and only you can decide how much risk - then you can choose to experiment. To fudge or modify recipes and compare recipes and draw your own conclusions on processing times, pH levels, etc. Many folks do as you know from many of the posts here. But especially when new to canning, be sure to make that choice with great care because it is very, very easy to trip over a mistaken assumption. Obviously I try to preach safe canning and following the guidelines. That is the way I learned. It is what I practice and it has worked just fine for me for many years. That approach is stressed over and over in certification classes. Comments (43)And you and ruthie are of course both right that we each need to find our own balance. That's one reason I tend to pipe up around here if someone says doing something is "not allowed" or "against the rules" or "unsafe." I repeat, there is NO home canning police, and many variations from the USDA/NHFCP/Food Canada recommendations are NOT so much known to be unsafe as not proven to be 100% risk-free, which is a VERY different thing. Yes, Zabby I know it upsets you when I say such things. ;) But if you recall, it is usually in response to a specific question from someone who has never canned before or for years. A very different situation than when talking with an experienced canner who understands the underlying principles of home food preservation. True, there is no canning police but given the amount of UNsafe canning practices out there and poor quality not to mention very unsafe info available on the web, maybe there should be at least one place where folks can count on to provide exceptionally safe info - perhaps here? That way they get both sides of the issue and can decide for themselves. There is a very real need for stressing safety when it comes to addressing inexperienced home canners - many of whom lurk here and have come to trust us over the years as a source of safe info. Harvest Forum at GW comes up as a recommended source of good info many places on the web and usually pops up first or second when anyone Googles a canning question so it would be irresponsible of us to toss off a quick "oh, sure I do that all the time" answer when it is a clearly questionable area. Of course we can all toss out shortcuts and changes we have discovered to be safe over the years, but it should be done with care as to who may be reading what we say and provide the needed disclaimers too. Comments (177)I've been out of town at a conference, where I've had plenty of opportunity to observe people's dress and what looks good and not so good on certain body types. Some people just have the ability to look really well put together regardless of their age or size. OTOH, there were people with rockin' bodies, some who have to be sure to wear everything tight to show it off. I don't care for that either. This one lady with fabulous arms was only wearing Athleta dresses from what they looked like to me. I do think it's easier for men than for women. Men's clothes are also more standard sizing, but I've known big and tall men who looked great. Comments (11)I completely understand the frustration, I go to a variety of clinics for my work. Only 1 clinic is strict about wearing masks, (which is mind boggling on it’s own). but not one has ever volunteered to let me know when someone there has been or is out due to covid. (Without a name even) I will randomly ask and yes, some people have actually been out due to covid and yes, they still expect me to show up. They work with skeleton crews, but it’s as if their vendors don’t seem to matter at all. HIPPA CLARIFICATION: Most people don’t realize this, but the only time a school is bound to HIPPA protections is when a student is receiving medical care from that school. The only parties mandated by HIPPA are health related services like Hospitals, Pharmacies, Clinics, Health Insurance and so on. So the situation you find yourself in with the school must either be mandated under a different rule or by the choice of the powers that be....See Moredigdirt2
