Fermenting Pickle Jar?

Does anyone just keep a jar with seasonings, vinegar, salt, etc. in the fridge and toss in veggies as they become available?

Turns out, this year I have just 3 pickling cuke plants. I get 2-5 every day or so that are of a decent size to make a pickle (thinking dill varieties here).

Can I just make brine and pop the clean cukes in there as I get them?

Any Other options? Mostly just for cukes, but possibly some peppers and cherry tomatoes.
