Leftover corn cobs

Hello all. I'm sure you are all busy this time of year putting up what you got out of this season. I know I am!! It's been a good year. I'm working today on putting up a few dozen ears of corn (whole kernel style) while the wife is away today and had a question. Is there anything "good" I should be doing with all these empty cobs and husks. I know the obvious that I could use them for some compost but I hate to let them all just rot on me. Could they be used in stock or some other method if I'd roast them in the oven or something. I'm open to all ideas. Thanks!!

Yes, corn cob jelly. I am serious, there really is a recipe for it. I have never tasted it. Maybe someone else here has.

Put them in a bag, stick 'em in the freezer. Next time you make soup, add them to the stock. They've got LOTS of flavor. Corn chowder is especially good if you add the cobs while the soup's cooking.

The NPK of chicken manure 1.1 0.8 0.5, not really that high in nitrogen, but unlike other manures it's fast acting and breaks down quickest of all manures. Because of this use it carefully as it may burn. It also, stinks like hell so composting it first is definitely recommended. That said, If you don't have that much of it, you can scratch it in sparingly outside the drip line. By the time it breaks down and reaches the root zone, it should have aged enough so as not to be a problem. Or, you could place it in a barrel of water and use it as a tea. That should soak the corn cob residue which would help it break down faster. Only problem, it would really smell. You'd probably have to wear a gas mask when you applied it. We have a chicken ranch/egg operation in our area. When they clean out the chicken houses, it can be smelled for miles around.

I finally made some last summer with Silver Queen cobs after stripping the kernels. Turned out tasting kind of like cornbread, pop corn, roasted corn, etc. And it was light brown in color, like chicken broth. Not sure I'll ever make it again, but I might try it with red cobs instead of sweet cobs and see if there is a difference. Now that I've been watching DD&D and seeing how some restaurateurs make soup bases by simmering cobs, shucks, and silks, I might have to add a lot more than just cobs to try next time. Young stalks are actually quite sweet and juicy in spots. About the time baby corn is ready, the stalks are edible. Or at least not too fibrous yet. I had Trucker's Favorite volunteers last fall that grew about a month when I was picking. Really interesting.

I'm glad your pup is OK Shaun. I accidentally fed corn to one of mine the other day. While cutting some off the cob for a new recipe a lot wound up on the floor so I let her eat it. I got the finger wagged in my face for letting her eat corn with her digestive issues. At least I didn't drop the cob. LOL Back to corn... It is so cheap and so sweet in FL right now that I went looking for a different way to prepare it. I found a recipe that I had saved from the guy who won Rachael Ray's so you think you can cook contest last year. I liked it alot. I completely forgot to add the butter at the end but I can say that it was real tasty even without the butter. I just finished the leftovers. Yum! Carmelized corn Pete from Rachel Ray 3 tablespoons EVOO Extra Virgin Olive Oil 4 to 5 ears (2 cups) fresh corn, cut off cob Salt and freshly ground black pepper 3 shallots, minced 1 clove garlic, minced 5 tablespoons fresh parsley, finely chopped 1 tablespoon fresh thyme, chopped 1 tablespoon fresh chives, chopped 1/2 cup dry white wine (preferably Sauvignon Blanc) 2 tablespoons butter Heat 1 tablespoon EVOO in a large skillet over high heat. Add corn, a good pinch of salt and 2 to 3 turns freshly ground pepper. Toss corn to coat lightly with EVOO and cook until slightly browned and caramelized, approximately 2-3 minutes. Lower heat under corn to medium-high. Add remaining 2 tablespoons EVOO to the pan along with the shallots, garlic, 5 tablespoons parsley, thyme and chives. Re-season with salt and pepper, give everything a toss and cook until the shallots are translucent. Deglaze the pan with the white wine, scraping bottom of pan to pull up any brown bits. Cook for 1 minute. Cut butter into small chunks and scatter over corn. Cook till wine is reduced by half

$0 for about 20 ears. Just coming out of the garden at my DMs house and I was loaded down with tomatoes, cucumbers, squash, a cabbage head and green onions our neighbor pulled up and ask did we want some corn and he gave us about 20 ears. Wonderful, delicious sweet corn. Rural Kentucky!!! People can say we stay barefoot and pregnant, I am not pregnant, but I was barefoot as the muddy garden had sucked my flip flops right off my feet. We sure did have a lot of good garden food that day with very little money invested, but a lot of sweat equity. Worth every drop. We eat like kings all summer long with our wonderful garden bounty and Mom still loves to can a lot of things. win win. Our corn won't be ready for another month so we will eat our neighbors corn for now and when ours comes in we will share it with him.

Hmmm I'll have to look for corn cob jelly just out of sheer curiosity!! I will definitely be saving them for some stock too. I'm making stocks I think tomorrow so I can definitely use some there. I love a good chicken corn chowder too so my mouth is watering already! Any other ideas out there...I"m staring at a 5 gallon bucket of corn cobs here!!

I made corn cob jelly last week. This is the recipe I got:

You want corn cobs that the kernels have been cut off, but not scraped.

12 corn cobs. Cover with ~6 cups of water. Boil for about 20 minutes. Strain the "corn cob tea" thru a jelly bag.

Take 3 cups of corn cob tea, add a box of powdered pectin, bring to a boil. Add 3 cups of sugar. Return to boil and boil 1 minute.

Fill hot clean jars and BWB for 10 minutes

I did add 1/4 c. of lemon juice to mine. When I asked on another forum if anyone had a recipe for corn cob jelly, somebody replied that corn is a huge source of botulism, and questioned why I would want to risk harming my family. So I added the lemon juice.

It kinda tastes like corn syrup. But good quality corn syrup, not Karo. Next time I will try boiling my cobs longer to try to extract more corn flavor.

I've tasted corn cob jelly, one of the vendors at the farmers market makes it, and to me it tastes like nothing. There isn't much nutritional value either, one would suppose. It seems like just canned gelled sugar.

If the husks are from red field corn you can dry them and use them to make tamales. I don't think it works for sweet corn though, which I assume you have. The same is true in the recipe on the NCHFP website - it also says to use red field corn cobs - so, it does not say to use sweet corn cobs.

I don't use the cobs for anything but the neighbor's chicken feed fun and husks go into the leaf shredder for composting. I don't like using the cobs in soup bases because the cob imparts a musty smell and taste, in my opinion. You may like it, or not. I suggest you try a bit before spending much more effort trying to keep your "harvest" if it is not to your liking.

NCHFP offers the corncob jelly recipe if interested. Personally, having tasted it, I'd prefer using them for compost or just boil them and can the stock.
