Did I pick my Roma tomatoes too soon?

I just washed a ton of Roma tomatoes, to dip, skin and freeze.

I picked them several days ago, and realized that they were a bit hard, so I left them on the kitchen table, under towels for about 4 days. I decided today was the day, and just finished washing them and the boiling water is heating.

But.....I'm starting to have fears that I picked them too soon.

They usually fall off the plant too soon and get diseased/eaten, so I decided to pick them before they fell off. They came off the stem really easily. But now that I'm ready to freeze them, I'm getting nervous about their hardness. These never get that red, just orange/red.

If I find that their skins don't come off easily (which will tell me it WAS too soon), can I let them sit longer, even though I've already washed them?
