warming drawer for drying tomatoes

Hi

I have been using a deydrator (too slow) and then my gas oven (too fast) to dry various things.

This year I had an *ahaa** moment and tried the warming drawer in the bottom of my oven. I set it on low and it is 'just right'

I soak the tomatoes in red wine, drain, salt a bit and put them on a cookie sheet with parchment paper. I think it takes about 12 hours until the first ones are done. They dry fairly evenly and I don't flip them over until after a bunch are dried already, and that is usually just the ends which are a bit more pulpy.
