Pineapple Peach Jam

I was thinking of making a combo jam out of both peaches and pineapple. It just sounded good. I noticed the sugar for 5 lbs of pineapple is 2.5 cups and 6.5 cups for peaches in most recipes. Does anyone have an idea of how much sugar to use if I try this? or a recipe for this? Thanks much! Lauren

I look forward to hearing replies for this one! In the past, my jam made with fresh pineapple wouldn't set up, and i never knew why :-(

I don't have an answer for the jam, but just recently discovered if you put fresh pineapple in jello it won't set up either!! :+(

Canned works fine.........

Yes, you can use canned crushed, as well as frozen pineapple juice concentrate. To add a bit more charater, try a little orange juice with it as well. Locally, many stores stopped carrying frozen pineapple juice, as well as my favorite pink grapefruit juice. I rememeber when you could get many different 100% juices like cranberry, Granny Smith Apple, and a few others. But I guess the stores just don't like to stock these, in favor of the 10% juices with fructose added.

OK, generally the line for high-acid as opposed to low-acid is 4.6 pH. The lower the number the more acid the product is, so lemons are 2.00-2.60 and peaches are 3.30-4.05. There's nothing marginal about peaches. They're an acid food and there aren't any botulism concerns unless you added low-acid product (which you didn't since berries are also high-acid). I suppose hypothetically if you canned a peach-banana jam or a peach-melon jam, you might have an issue, but here there is none. The lady you spoke to is mistaken. Think about it. If she were correct, we'd all be adding lemon juice to canned peaches. So no, I wouldn't re-process. If the seals are good, the only issue is possibly a speedier darkening or perhaps a slightly flatter flavor (depends on the peach variety) due to the lack of lemon juice. Those are trivial. You can save yourself a whole lot of time, effort and expense. I'm with Dave. In a conventional jam (not Pomona Pectin) you sometimes need additional acid not for food safety but for the set. Regular jams require a particular balance of acid, pectin and sugar. Added lemon juice can improve the setting qualities. But with Pomona that's not an issue, so in their case it's color retention and/or added piquancy of flavor. The 24-hour limit is because normally when people re-process it's because seals are untrustworthy, processing time is too short, some crucial ingredient is omitted like citric acid in tomatoes. Those are all safety issues. Beyond the 24-hour point, there may be spoilage or contamination that is not corrected by re-processing. With a low-sugar jam there's the risk of mold spores. You might not be able to see them but they could be there. With a full-sugar jam, frankly, if someone wanted to re-process beyond the 24-hour period, I don't see any reason why they couldn't. Carol

I don't have the steamer, but do things the old way. I juice them by crushing and straining thru a bag. I use the pulp for jam, and the juice for jelly. I also use the pulp for butters.

blueberry-pineapple jam

in case you guys were wondering what it came out looking like, here's the pic. by volume it was probably 3/4 pineapple (this is before the sugar went in), but the color would lead one to believe it was mostly blueberry. I think it came out wonderfully. with the addition of one carolina reaper pepper, it's wonderfully spicy too. excellent addition to a morning bagel if you're like me and aren't a morning person. it wakes you right up. 1 large pineapple, 8oz blueberries 1 tbsp lime juice 1 carolina reaper pepper 3 cups sugar 3 tbsp ball NSN powder pectin yield: 3 pints I threw the pepper, the blueberries, and the pineapple in the blender and blended til smooth, from there I followed normal jam making procedure, and boiling water processed for 10 min. it set very well, I am quite happy with the consistency and texture. I also made another spicy pineapple (no blueberries), spicy apple spice, spicy chocolate strawberry, and non spicy strawberry jam for my wife, who can't handle the spicy jams. with those and the hot sauces, I think I have most of my christmas list taken care of now.

The combination sounds great. With grape jam, I add 6 cups of sugar to 8 cups of grapes. It would work out to 6 3/4 cups sugar for 9 cups of fruit. I don't know if you would need to add pectin or not. I don't know if the jam would set up otherwise.

Instead of all the added sugar. I prefer to use canned, frozen, grape concentrate. This has no added sugar and will help increase sweetness and flavor. If the jelly is a lear type, white grape juice concentrate or apple juice concentrate can also work well. Soon, I plan to make some grape jelly and use Splenda and Pomona pectin. The last batch was fantastic and was gone in no time.

Hey Ken! Do you know if you can thicken FRESH pineapple with Pomona's??? I haven't tried that one.

Pomona will need to be cooked and the pineapple will need to be cooked. So yes, it will work quite well. If you have ever added fresh cut pineapple to jello, you will realize that its not a good combination. As it turns out the jello will break down quickly and turn to liquid if fresh pineapple is mixed into it. Your making a pineapple jam, I must assume. Pomona, like any other pectin must be dissolved in the liquid its added to, and the only way that can be done is by boiling the liquid.

Regarding Pineapple having problems with jam setting: Growing up in Hawaii we always made Papaya-Pineapple Jam. It was cooked a bit, and mostly we didn't use pectin, and it always set ... but it wasn't super thick and stiff. But very, very good. You might want to check out that recipe here, and see if it helps you. It sounds like a nice combination, and I think Apricot-Pineapple sounds good, too.

Tropical fruit spread.. Pineapple, mango, papaya, and passion fruit (or juices). And made into a spread..

My raspberries have been picked and are now frozen. Because I didn't have quite enough, I also picked a few leftover blueberries and some seedless grapes I was also growing. These will all go through my Villaware food strainer and thats when they get to become a seedless jam. Recently, I saw an interesting dried berry in Costco. Its called a Goji berry and the bag mentioned it was made with some pomagranite juice the Goji berries are soaked in. Its tart, and similar to appearance to dried cranberries (Craisins). I may also add a few of these goji berries to some of the red raspberry jam, and call that a mixed berry jam. The black raspberries I have are just now ripening too, so they also get into one of the batches.

I ended up making plain pineapple jam. I used surejell and it set up great! No problems at all! Lauren
