Does Anyone Have a Safe PC Recipe for Roasted Tomatoes

I used tomatoes recipes and pickyourown.org recipes(I learned this is not good) in the past. I need a PC recipe to finish the roasted tomatoes we have.

As far as I know there is no approved tested recipe for them in a PC. BBB has one for a BWB though - pg. 82 in the newest edition. Why not just use it? You have to use 2T bottled lemon juice or 1/2 tsp. citric acid per quart and process them for 1 hour and 25 mins because they are so dense.

Depending on which PC you have and how deep it is you can use it as a BWB just as easily.

it does not make much sense to me that they have a BWB and no PC. The reason we bought a pressure canner is that roasted peps the only one recipe we found required a PC. A PC IS SUPPOSED TO KILL most of the bacteria which a BWB does not. We can use it as a BWB WE HAVE IN THE PAST but the question is why? sorry the caps button is broke

Well, assuming you didn't use olive oil during the roasting process . . . No, you'll still have issues. One is acidity, not so much because of the tomatoes but because of the peppers. And secondly there are density issues because the density of roasted vegetables is much greater. Honestly, I have not a clue and I doubt anyone else does either. Maybe someone else has a better answer, but mine would be "No." Carol

I did find an old copy of Katie's recipe in my files for a processing time of 70 minutes for quarts (here's the recipe I have for comparison and in case someone can't find it by searching): Roasted Tomato Garlic Soup Recipe By :Katie Serving Size : 0 Preparation Time :0:00 Categories : Preserving Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 12 tomatoes -- *see Note 2 carrots -- cut in 2" pieces 1 large onion -- quartered 2 whole heads garlic -- peeled (or more, to taste) olive oil 2 cups chicken broth -- (or 3) 1/2 cup chopped fresh basil -- (or 1 Tbsp. dried) cream -- to taste (do not include when canning!) Core tomatoes and cut in half. Place, cut side up, on foil covered cookie sheet with carrots, onion and garlic. Brush with olive oil. Drizzle with a little balsamic vinegar if desired. Bake at 400F for about an hour, or until vegies are roasted and a little blackened. Place in a large saucepan with the chicken broth and basil and simmer for about 10 minutes. Blend with a stick blender (or in small batches in a blender) until almost smooth. Add cream to taste. *Note: These measurements are approximate...I use whatever it takes to cover the cookie sheet. This makes 1 1/2 to 2 quarts of soup. - - - - - - - - - - - - - - - - - - - NOTES : To can: Do not include cream when canning. Ladle into clean hot jars and leave a one-inch headspace. this year i was inundated with tomatoes, ripe and unripe. i canned several recipes for the green ones ( my 1st time using using them) . i loved them all ! my suggestion is to scale down 1 or 2 canning recipes and just refrigerate them for a few weeks. that way, when you do get too many, you'll know what you want to do with them.

Slaght Oct. 19, 2015 (Excerpted) MINNEAPOLIS — AT this time of year, kitchens across North America are filled with the aroma of freshly picked basil, fistfuls of peeled garlic bulbs, hunks of Parmesan, cruets of olive oil and jars of pine nuts. It’s pesto season. Mixing these ingredients into a delicious sauce for use throughout the winter months is an end-of-summer tradition. The tiny, delectable pine nut is often viewed as essential to a classic pesto “alla Genovese,” but it is the most vexing ingredient — for the high cost of even a small packet or jar of them. They also come at another kind of price: The pine nut industry may be contributing to the crash of an ecosystem. According to the International Union for Conservation of Nature, a majority of pine nuts imported into the United States come from the Korean pine tree, a keystone species found primarily in the southern parts of the Russian far east. The temperate rain forest of this wild corner of Russia represents a mere 1 percent of the country’s territory yet contains about a quarter of its endangered vertebrate species. ....An ever-expanding road network, driven by selective logging, is exposing more and more of the region to the covetous reach of pine nut harvesters. Once collected, the cones are shucked and the nuts, still in their shells, are sold to Chinese merchants, who haul truckloads across the border to China. From there, they are shipped to overseas markets. Depending on the market price, local traders will pay about $6 for a sack of Korean pine cones, which can hold on average about 125 cones. Last year, I (the author) encountered a group of collectors in the forest that had filled 4,000 sacks — half a million cones — in just six weeks. The "why" is probably because demand for the testing just wasn't there.

Given the thousands of dollars cost of doing the year long lab testing to develop approved recipes, and that BWB instructions and testing already existed, and that the interest in PCing roasted tomatoes was low, no PC instructions were developed.

Most are content to use the BWB instructions and some would argue that the quality of the end product is better than if it was done in a PC, firmer and with better taste too.

That is the usual explanation for why certain recipes/instructions don't exist. And given all the cuts in USDA/NCHFP funding, essentially shutting them down, I wouldn't expect that to change.

But even if you do them in a PC you still have to add the citric acid or lemon juice of course.

thank you soo much Dave, I totally understand it now. i use citric acid, which i forgot in my originally post, is there anyway to figure out the time a PC might take if you know a BWB takes a 1hr 25mins?

On a canning forum the odds would obviously favor that a PC means pressure canner.

Pressure cookers have no role in canning and neither do the other two, Pickle Crisp is a brand name so written out. When all else fails you can always determine the meaning from the context in which it is written.

No, sorry it isn't a mathematical formula or a simple "take half the time and add 5 mins.". There are too many variables involved.

EX: even if you took the longest PC processing time approved for tomatoes which I think is either 40 or 45 mins., that time is for a less dense/more juicy food than your tomatoes that have been roasted. Add to that the fact that you add water (which is alkaline at around 6.0) to replace the juice that the roasting removed (which was borderline low-acid at 4.6) and you have another monkey-wrench in the equation. See what I mean? And that just scratches the surface.

You'd be better off pressure canning your tomatoes BEFORE roasting using the approved instructions for that and then roasting them after you open the jars.

Or you can BWB them for the time in the BBB.
