It may be the way you prepared them for freezing - did you blanch them first and then into an ice bath? If not they turn mushy. Then drain well, pat dry, spread out on cookie sheet to flash freeze and then package them. Or it may be that you are just over-cooking them once you take them out of the freezer. I do not thaw first, just dump them into already boiling water, let it return to a boil and then reduce to simmer for approx. 5-6 min. And it could also be the quality of the beans themselves. Some varieties freeze better than others. And harvest them when still young and tender. If left on the vine too long before picking some varieties will lose all flavor. Dave

Make pickles out of them - Dilly Beans or 3 bean salad. Personally when they get like that I just let them dry on the vine and then save them for seed to plant the following year. Dave

Mushy beans is the worst case. You did what was necessary to make them safe, just not in the best order. Best to have turned the burner off and waited until you could remove the lid too. Then go for the walk and come back and start over with the processing. 45 mins. isn't long - not like folks who want to leave the jars sitting in it overnight - but you want to avoid letting jars sit in the sealed canner once finished. Fence is up! Decided to put it in in the front side of the house. More sun. I was going to eventually cut down some tree limbs in the back but not supposed to be getting my saw until the end of the month. I ordered it about a month ago! I realized this afternoon that a big part of where I was going to put the garden out back didn't get a lot sunlight. So just decided to put it on the side of the house instead. Only thing growing over there is a holly bush that is getting out of hand and over hanging honeysuckle and grapevine that the previous owner planted. It's all up in the big tree that hangs over my fence from the neighbors. The girls are going to come back and cut it down sometime. I got the front flower garden planted with mostly marigolds my daughter picked up on her way over here. I asked for 20 plants and she picked up about twice that much-lol. But that's okay will put them in with my vegetables too. They're coming back early tomorrow before the rain to help me finish planting everything else.
