Safer to eat canned or frozen?

After reading a lot of the post on the questioning of others canning methods makes me wonder if you think it is safer to eat canned or frozen vegetables or fruits? DT

I don't think that either is "safer" than the other; either can be poorly prepared and/or mishandled causing deterioration or even spoiling of the food.

I agree. There's no inherent safety advantage with either method.

If canned food is properly processed using a tested recipe, once processed it is safe and will continue to be so, barring adverse conditions. (For example, a popped seal because it's stored in an overheated garage.)

If frozen food is not allowed to sit at room temperature for bacteria to grow, if the proper temperature is maintained in the freezer, that food will also be safe.

Assuming quality produce and optimal conditions in both cases, there would be a slight nutritional advantage with frozen foods, but not a safety advantage.

I made it exactly by the recipe, including the cloves. I saved out enough of the batch for supper that night and processed the rest (a full canner load). I had never used the dried beans (rehydrated per the recipe) before, and thought they tasted rather bland in the unprocessed supper batch of chili. I was pleasantly surprised when I opened one of the processed jars--the flavors and texture were much improved and matured by the pressure canning. If you do a taste test prior to processing and are thinking of adjusting the seasonings--I would wait. You can always adjust seasonings after opening the jars, but you can't take it back once you put it in! I've heard that cloves can give a strong taste in canning, but this is a small amount in the recipe. It does NOT give it a clove taste, and after tasting it, I doubt I could even identify that it had cloves in it. On the other hand, when I make this again, I won't leave it out because the whole recipe works as-is. I hope you like it as much as I did. Jill

Ok, someone take me thru the steps for canning new potatoes that actually tastes good (not mushy) when come out of jars. The problem is you are trying to can NEW potatoes. Doesn't work because the thin, immature skins allow rapid moisture loss, are almost impossible to peel so pathogen levels are high, and they are too high in sugars. You can can them but they will be mushy. Plus the variety makes a big difference. Some varieties hold up to canning much better than others - new or aged. Most canning instructions call for well-aged or mature potatoes as mature/aged potatoes have converted their sugars to starch and the skins have toughened and are easily peeled for canning. If you have too many new potatoes to eat why are you digging them so early.? Just harvest enough to eat and leave the rest to mature. Both are, from what I read, about the same. If you can believe the manufacturers, and given the record of many of these manufacturers they do not have very good veracity, both are rather innocuous. However, there is evidence from the EPA that the glyphosate products are more persistent in the environment then the makers tell us and where glyphosate products are used genetic modification of lower life forms has been observed, ie. 3 and 5 legged frogs and toads. Is it really necessary to spray poisons on annual "weedy" grasses or are there other, less harmful methods to control them?

I do freeze a lot, but I have a LOT more storage space for canned foods than for frozen. I have a nice dark basement with lots of shelves that pretty much stay 65 year-round, but my freezer is just five not-so-huge shelves that I can only stack so high, and I like to use it for things that really just work better frozen, like meat. I'm getting a side of beef this year, so I'm really trying hard to figure out what items can be stored just as well canned.

Frozen, but that depends of the food and the process used to preserve it
