Peaches in Syrup - Safety Question

I picked up the most beautiful peaches today and want to preserve them in syrup (cold pack). Can I flavor the syrup with ginger? I was thinking of infusing the whole thing overnight a la Christine Ferber, strain the next day, fill the jars, bring the syrup to temperature, remove ginger and pour syrup into jars. Is this safe? Can I put a cinnamon stick in the jar?
