Fresh vs. bottled lemon juice

Disclaimer: you can't substitute fresh lemon juice when the recipe calls for bottled, which means tomatoes, salsas, etc.

Carol posted in the strawberry jam thread that Ann could increase lemon juice to cut sweetness, but specified fresh juice only. I usually use bottled for everything--why would I be able to increase only if using fresh?

Also, if I don't increase, what volume of juice is expected from a small lemon? I get varied amounts based on whether I'm using the citrus reamer (adds pulp) or just squeezing.
