Bef Stew Question

Hi Everyone!

I am thawing the beef to make the Beef Stew with Vegetables recipe in my 2006 Edition of Ball Complete Book of Home Preserving, p.407 in my edition. Have any of you made this recipe? If so, did you like it?

Ingredients: 4-5lb. cubed stewing beef, 12c. cubed peeled potatoes. 8c. sliced peeled carrots, 3c. chopped celery, 3. chopped onion, 4.5tsp. salt, 1 tsp dried thyme, 1/2 tsp. ground black pepper, boiling water to cover.

Will this be richly flavored? I was considering adding a bit of crushed red pepper for tingle, as the only herb in this recipe is dried thyme, and a tsp. isn't much for 7qt. of stew. Since the timing is the same as for the meat, I am wondering if I could use home-canned beef broth instead of water for more flavor?
