Well, it's almost giant knotweed harvest season here, so I thought that I'd post a recipe. For those who think knotweed is only a weed, be aware that it is closely related to rhubarb and tastes quite a lot like it, but different at the same time. It's unique. You harvest the shoots when they are about a foot tall, sort of like asparagus.
Strawberry Knotweed Cheese Cobbler
2 cups bread crumbs
1/4 cup oil
2 cups cottage cheese or ricotta
3 cups knotweed shoots, peeled and sliced
2-1/2 cups strawberry jam
1 cup nuts, chopped
1) Preheat oven to 350F.
2) Mix the breadcrumbs with the oil.
3) Layer a large oiled baking dish with cheese, knotweed, strawberry jam, oiled breadcrumbs, and nuts, pressing everything down.
4) Bake uncovered for 30 minutes.
4. Chill and serve. Tastes good with vanilla ice cream.
