Canning Baby Corn

Has anyone ever canned baby corn? Do you pick regular sweet corn early or is there a special variety that only gets so big?

The baby corn are, in fact a special type. They usually grow a few per stalk and are picked at only about 2-3 inches long. Sorry, I don't have a source. If canning, they should probably be pressure canned.

This is what I found so far. It can be done with regular corn, I guess, but getting it cut on the exact day is critical. Interesting information, anyway on how they did this trial.

I haven't had time to hunt for canning information on it yet.

I grew it last year and have some planted this year. Last year I started the seeds inside on 5/13, planted it in the garden 6/16, had my first harvest 8/22 and my last harvest 9/20. It grew about 3' high and out of 16 plants, I yielded enough for several 4 serving meals plus I froze a couple packages. It requires 2 hands to pick as the stalk is not too thick and can be broken easily when harvesting if you are not careful. This year I didn't get a chance to start it indoors so I planted it direct in the garden on 6/16, right now it's only 1' high so I'm not optimistic. Though according to my notes, it was slow to grow last year until the heat hit.

thanks. I've grown conventional corn 1 per square foot and a similar variety at 8 inches on center. I had no idea I could do four per square. This stuff is the tiny stir fry type baby cobs, so if normal corn is 4 per square, perhaps I'll try some at four and a few at 9 per square just to see how it does. How much I put in depends on how many beds I get built by the end of May. For the baby stuff I was thinking of as few as four squares, perhaps as many as 8. I don't need a lot of this type of corn and they produce 3 to 5 ears per stalk.

Thanks both of you! Great link Linda Lou. This is in preparation for a great recipe for cornbread. I'm a diabetic too and am trying alternative recipes that don't run up my sugar quite as much as old fashioned cornbread. It will probably be a 'make do' recipe that will tide me over with chili or soup and only occasionally have the real (bad!) cornbread.

If you are looking for a prolific baby corn, try Chires Baby Corn from Seeds of Change. I tried it for the first time last year and it was productive and very tasty. Freezes well.
