Need some advice for storing leftover ham...

Making a spiral cut ham tonight for dinner, but I am going out of town for the next few days (long story, short notice, ham already defrosted...oy!).

Anyway, I am looking for the best way to preserve the leftovers. First, I love ham soup made with the leftover bones, but won't be able to do that before we leave. Can I freeze the bones and then make the soup later? Second, there will be far too much meat left over after we finish eating it, I can have some for lunch tomorrow for sandwiches, but what about the rest? Freezing is an option, as is canning (just bought a pressure canner and have used it a few times, but haven't put up any meat with it yet). I figure freezing is easier, but is it better than canning?

Any help is appreciated...
