Home made potato chips

Last evening, my wife and I had dinner at a country steak place. Everything was excellent and for appetizers, they had home made potato chips with Ranch salad dressing for a dip. The chips were slightly thicker than bought but really crisp. We have tried before to make home made potato chips but can never get them to stay crisp. Does anyone here know the secret to getting the chips to stay crisp? The ones the restaurant had were not greasy at all and were very dry to the touch. Ours are always crisp or over done around the edges and soggy in the middle.
