What to with orange pulp and citrus peel

Today, I zested 18 oranges. Anyone with a good recipe to use the pulp? I am not much interested in orange jam as I will make so much marmalade. Anything else?

Also, here is a tip I got from a friend. I never end up with leftover orange peel sadly, but when I make lots of lemonade, I end up with lots of lemon peel. Besides candying them, this is what I do with them. Remove as much pith from them as you can, cut in small squares and put in Mason jar(s) covered with a mix half rum, half lemon liquor (if lemon peel, orange if orange peel, cointrau is good)and a couple of tablespoons of sugar. Use as candied peels in recipes like fruit cake or mincemeat, even add to muffins and others. Delicious.

I made quince paste from the quince pulp left over from making jelly, is there a candy I can make with the orange pulp? I find I need the zest without the orange more often than not and never know what to do with the orange left over. 1 or 2 we eat, but I often get stuck with dozens.

thanks for the help again

Marie
