Eating Chaya...Does it really taste good?

From a stick someone gave me a few years back, I now have chaya growing everywhere. I have it growing as a companion plant with things that go dormant, like plumeria, since it's so pretty and I love the flowers. So this year, I think I have enough to actually pick and eat without ruining the look of any of the plants.

Is it really tasty? I'm planning to put a little ham hock in it and cook it like collard greens. Do you have to strip the veins out of the leaves? How large a leaf can you use and it still taste good?

I'm excited about eating my first taste!
