From fescue to zoysia without herbicide?

Hi,

We just moved to SC from Maryland and bought a house. Right now, the lawn is a mixture of fescue, centipede, crabgrass, and dead spots. We would like to switch to zoysia. I know it would be best to start off by killing everything with Roundup, but we really want to avoid using pesticides because of small kids being present and edible plants nearby. Any chance we would be able to put in zoysia from seed without herbicides? Plugs are too expensive - the lawn is large. I am willing to seed a few times or over a couple years. I will water it every day and all that. Any suggestions? Is it a silly idea?
