Planting dwarf/semi-dwarf fruit trees, how much room?

I'd like to plant some dwarf or semi-dwarf peaches, apricots and maybe apples in some planting areas around our pool. I need to figure out how many trees to plant and how much room to alot.

I also need to know if it's ok to plant these trees near cedar trees as some will nearly touch a row of cedars. I don't know what type of cedars we have but there is a huge row of cedars on one side of the planting area.

I assume that nut-palms are OK? I do have a few nut-palms planted in these areas and will be planting bougainvilla to climb up the palms. (I was thinking about grapes but they aren't terribly ornamental).

Any other advice is very welcome. I grew peaches and apples in OK but there I just stuck them in the ground and they grew like weeds. Took them off the trees and put them in the freezer. Had so many each year it was unbelievable. Boy do I miss those trees!!
