Talk to me about 'Soilless' mixes

I went to a container workshop last night, and they used this soilless mix...which, they said, they mix with a topsoil because the mix "...doesn't have nutrients" in it. They gave us a teaspoon or so of Osmocote to mix into it, too.

If this stuff doesn't have nutrients, then why the heck are we using it??!!! They only mixed in about 1/4 of topsoil, and the rest was this dry mix...consistency of dehydrated potatoes.

Help me out here. I'm not convinced this is 'right' and think I need to repot into 'real' potting soil.
