Comments (35)First we start off with antipasto, and stuffed mushrooms. Then the pasta dish, it will be homemade ravioli, courtesy of my Italian MIL. Then the salad, arugula sald topped with baked stuffed gorgonzola pears. Then the main dish, grilled lamb chops with grilled veggies, and a roast leg of lamb roasted with rosemary potatoes. All served with a lovely homemade red wine. I love my in laws, but I love them more after a few glasses of red :P DH and I are hosting this year to take the burden off my MIL who hosts everything. There will be 11 adults and 6 children, and 1 infant who is still just bottle feeding, no lamb for her! For desert mini coconut cupcakes and traditional grain pie and italian cheesecake. I have made those and considered them but decided not to do that - why I don't know?:) They are good. Jessica I thought about a herb/ving. style potato salad but thought it would compete w/the greek salad. Nancy I love Bleu Cheese and so do "some" others but the rest would stick their nose in the air! LOL! Linda - I agree w/ you and I worded wrong. I normally roast potatoes (cut in quarters) about 30 to 35 mins. at 425. You cook them longer? Asparagus I roast about the same amount of time as you. Trix. - I though about a make ahead potato casserole and Bumble the same w/scalloped or Au Gratin but I feel like that would be a bit much since the Crab Imperial is really rich. Twice baked potatoes crossed my mind also. Everyone is invited!!! The more the merrier! Bring on the wine, etc. I'm ready.:) Seriously, thank you all for your help. Comments (26)Hi Kids, We will not be having a big Easter dinner but I can't get away from tradition all together. No company for us and no invites to go out so we will be taking advantage of the good weather to get some heavy yard work done. I will start a pork butt in the crockpot in the morning so we will have some yummy pulled pork sanwiches at the end of our day. I also made some yummy pickled eggs last saturday so by tomorrow they should be perfect! It will be a very different Easter but I can live with change. I look forward to the pork. gazania, I hope you enjoy your pickled eggs and beets as much as I am going to enjoy mine. My kids love them when they are here but my husband can not stand them. He hates hard boiled eggs and when you add beets to the mix, he runs for the hills. I love them and can't get enough! Enjoy! It sounds like all of you will have wonderful meals, start to finish. It used to be dictated by one sister because as she has children, any and all schedules MUST be convenient for them, (none of my other siblings are like this, they all have children and understand that they wont DIE if they are a little more hungry than usual at mealtime). My mother always complied because the rest of us are more flexible and it was easier, even though it ticked me off. And to make it worse, that sister and her family are always always always LATE, even when she picked the mealtime, and then she blames it on having 6 kids. Its a vicious cycle. Or it was. But, as all her kids are getting older, and admittedly, I have become more obstinate about it, it is more flexible.(They are still always late, by an hour or so) I remember growing up it was at 3 pm. Always. Why I am not sure. When i started cooking the meal,I was still living at home and therefore cooked the whole meal there. I could not (still cant) STAND people in the kitchen PICKING at things because they were hungry, and then when the meal was ready everyone was full. Now that i make most of the meal at my own home the day before, well, the meal is when i show up and finish it. So there. This year I am hoping my mother will agree that a 12-1 pm mealtime will be okay. I have to be at work at 5 am the next morning because someone is on vacation that week and i am to cover her shift that day. Day shifts are pretty rough on me, rougher than they have been in years past, and i find i need more rest beforehand than i used to to be useful. They live about 45 minutes away, and i will be there early to start the turkey and other things, So I am hoping to leave around 3, 4 at the latest, get home, and get into bed.Besides, I have always thought such a big meal should be eaten at midday, then the leftovers can be picked at later when everyone gets hungry again. The only obstacle would be the above mentioned sister, who will be bringing some sweet potato thing and corn casserole. Normally i cook everything. But no matter to me anyway. I have NO reservations about serving the meal at the time it was announced that it would be served,whether or not they and their dishes are there.. They can put a plate in the microwave to reheat it when they get there. And that system doesn't seem to bother them either. It used to. She really expected us to wait, all the food ready, for her to show up and put whatever in the oven and wait for it to be done to eat. Nope. She learned the hard way....See More- 16 days ago
