I am currently making what I would loosely call a chicken and bean chili. It is not exactly what I would call a white chili except the chicken and white beans.
I went to a political meeting I last weekend that involved a potluck lunch. I sent a friend home with leftover focaccia and he gave me some leftover chili. Which go me thinking….
When I was looking for canned tomatoes on my pantry shelf I realized I had a large can of hominy I bought on sale a good while back. It expires technically this month. I was thinking of either adding it to the chili or possibly serving it on the side in some way. Any thoughts? I try to control my tendancy to make huge quantities of soup/stew/chili for my one person household but this does seem an appropriate addition to this meal.
