Comments (12)I was thinking along the lines of Cooke and Ntt Hou. How about some meringue shells? Not too much work. People generally buy them these days rather than make them and they're great just filled with fresh fruit. And sure, macaroons are one of my favorite ways to use them. Btw, when I freeze them I don't bother trying to find some container that fits them exactly. I just freeze them, and when they're frozen I take a piece of plastic wrap a little bigger than the size of the opening of the container and press it onto the surface of the egg whites, then pour a quarter to half inch of water on the wrap 'cup' and freeze it like that. Takes care of that drying problem nicely. When you go to thaw them, let them thaw in the fridge for a little while and then just pull out the plastic wrap with the disc of ice. Let them finish thawing and proceed. Sometimes I've actually done it without the wrap. Just wait a little while when it starts to thaw and pry the ice disc out. Comments (6)I always have egg whites in the freezer....but they will keep a surprisingly long time in the frig...a week easily. But now that I am older and smarter ;-) I just keep a container in the freezer with a running number on the top ( i.e. a 2 crossed out and a 4 crossed out and a 7 written in!) Comments (7)The last time I priced it out, the cartons contained about 16 egg whites and worked out to be cheaper than buying a dozen eggs and tossing the yolks. It wasn't always that way though - egg prices here have really gone up. I assume it is due to the high price of grain in Canada. I don't buy eggs anymore (I share own chickens), but occasionally I will still buy the carton of liquid whites if I need a large quantity and don't want to waste my precious, orange yolks! Comments (11)I save egg whites in the freezer, too. I use them by substituting the egg whites for whole eggs in baking...2 egg whites to replace 1 egg. White cake recipes often call for using egg whites only. Angel food cake--I made one only one time (long ago) and decided that I actually prefer the angel food cake mixes to the scratch one that I made. I doubt that I used a Tried & True recipe though and prolly used all-purpose flour because I seldom have cake flour on hand so you'll likely get better results. Oh, and the whites will work for things like meat loaf, too. And, I find that they will keep for several months in a small plastic or glass sealed container in my manual de-frost freezer....See More- 7 months ago
