Cooking with Egg Whites

I apparently have not yet mastered the fine art of cooking with egg whites (ok, I know I know, it's not a fine art) They end up dry and ugly. Very sad. Help!

Could you be a little more specific? What are you doing to the egg whites? Frying, whipping for meringue, poaching, etc.?

I'm trying to cut down on cholesterol so I'm looking for meals or breakfasts with egg whites only

asolo, Ya very mysterious, I am glad that yours is perfect, Do you want to trade? :) But I do not have the issue of mold in my Duet washer, it was in the old frigidaire fl, so that is not giving me grief. You say you have only had your washer for 3 yrs, so I guess you can keep using FS and let me know in 3+ yrs how everything looks, better yet close all your compartments and doors too and then let me know. I am sure that had a lot to do with it. I wasnt aware of any mold issues back then, and didnt even think about leaving doors open. Laundrymats dont leave there doors open. That Im aware of??? I came here to find other people that are having problems too and YES there are some, but I thought I would give some info of what has happened with my washer. I really didnt come here to be put down for having such problems. I am glad for you again for not having issues. I have had my washer replaced because the techs seen what was going on and they also did the loading and adding the soap and talked to the company as they was doing it to make sure that it "did have a problem". It did and still does! If you can figure it out let me know. but as you have read I think I have done everything possible to figure it out. I have been doing laundry for over 35 yrs I think I know how to wash clothes, it shouldnt be such an impossible task!!!!

make an angelfood cake to put that ice cream with. Real, home made angel food cake is nothing...NOTHING like a mix or the bought stuff....and it takes about 12 whites to make a cake! Angel food cake...Swan's Down Flour box 1 1/2 cups sifted flour ( sift first, then measure) 1/2 c. sifted sugar sift together 3 times 1 1/2 cups egg white at room temp 1/4 tsp salt 1 1/4 tsp cream of tartar Beat until soft peaks form....add 1 1/3 cups of sifted sugar a little at a time and beat until stiff peaks form, Add 1 1/2 tsp pure vanilla extract and 1/2 tsp almond extract, beat to blend. Fold in the combined flour and sugar 1/4 of the amount at a time. Pour into an ungreased tube pan ( it must be a pan that has never been greased and used for rolls or something else, or the grease in the cracks of the pan will not allow the cake to "climb the pan") Place in a pre-heated 375 degree oven and bake 40 to 50 minutes. "never use oil--it just gets brown and sticky, not black and slick" Alton Brown gave a rather compelling, and quite different, description of the seasoning procedure. The aim isn't, as I had always thought, to build up a layer of polymerized oil (yes, you can use oil) or grease on the surface of the pan. It's to actually cook the oil long enough and hard enough that you go past polymerization and actually drive the hydrogen atoms away in the form of smoke, leaving only a layer of carbon atoms. I seasoned a number of pieces of cast iron according to his process, and it is, BY FAR, better than anything I have ever done before, which was stopping far short of the "burning the hydrogen off."

Induction: can it replace a double-boiler?

Yes, you can. I haven't done anything fancy, or worried about tempering, but the heat should be constant with induction once the pot is fully heated. I use a one quart enamelled cast iron saucier on my lowest wattage ring, on 1-2. I think the enamel is important because it's totally non-reactive and the cast iron is very helpful because it's a poor conductor so, even though it takes longer to heat, it also is very even and doesn't cool quickly either. I've made Swiss meringue once on the induction too, but I'm pretty sure I did it in a glass bowl over a boiling pot. Mostly by habit. I suppose it could also be done in an enamelled pot, but I can't wrap my head around not having the bowl shape, and for even heating on induction, you want a flat bottomed, straight sided pot. It's probably not necessary to have a bowl, and just one of those "but that's the way we do it" things. Why not just try it? If you do, please report back...

Oh dear, I have no experience here at all because my doc told me I could have an egg yolk a day without compromising my cholesterol level, and so I happily eat the whole egg.

Elery makes egg white omelets, he whips up the egg white with a bit of water and plops it into a nonstick pan with cooking spray, lets it "set up", adds the veggies and folds and eats. Be careful not to let it brown, it needs easy cooking and low heat.

i cook them like a scrambled egg and add cheese, veggies, like mushrooms..cook it on a lower heat

I cook my egg whites in the GT Xpress. Heat up the Xpress, a quick spray of PAM, pour egg white into the chamber, sprinkle roasted garlic & pepper, also some Cajun and chopped mushrooms. Close the lid and cook for 5 minutes. Voila, I got egg white omelet! Goes very well with my salad.

If you're not looking to completely eliminate the egg yolks, just reduce your intake, you could try scrambling 2-3 egg whites with 1 egg yolk. That way you get something that looks and acts more like whole eggs but has significantly decreased cholesterol etc. I've done that for so long that my picky DH has even come to like it that way! :P

As for me, I beat egg whites with a little water and dump in a non-stick pan over "just above medium" heat. Then I just add salt and pepper and flip over when set. I don't mind if they brown a little bit and would prefer for them to be completely set than at all soupy. YMMV.
