Comments (10)Zipper.....Don't be impressed. ;-) I "created" that recipe by taking an old recipe that I'd had for eons and "diddling" around with the ingredients until I was satisfied...taste, texture, carb and calorie wise...that it met my personal requirements. So...I really can't take all the credit for this one...but I don't know who originated it before I "diddled" around with it. It was the only Gingerbread recipe I'd ever seen that was successfully baked in a 9" x 5" loaf pan...and I had it tucked away in one of my old "collection" files. Most Gingerbread recipes are written for square corn bread type pans...and I wanted a Gingerbread that I could slice. Lillie...I absolutely ADORE real whipped cream...but...alas...those days are long gone for me. Sigh. If I had my druthers...I'd probably have more whipped cream on a piece than there was Gingerbread. ;-) No...I've never tried graham flour...or almond flour...but they sound delicious. There's one health food store in this town that just might carry both. They're a little pricey [the store] for me these days...but I'll go take a look the next time I'm on that side of town. Thanks for the recommendations...and the flour treatment trick. When I started using wheat flour I did an internet search to get info on how to treat it...and what to expect. A few of the sites that I read advised cutting 2 Tbsp from a cup of the wheat flour if one was converting a white flour recipe...so that's what I did and it works very nicely. I wonder if that would be the case if I processed the flour as you've suggested. It would, definitely, have more air in it. One thing that I have noticed using the wheat flour is that my end products seem moister and have a longer shelf life. And...personally...I'm very fond of the taste. Comments (17)Glenda...I'm sorry; I didn't intend for the "onion bag suggestion" come across wrong. I know your Mom's were the fiber ones. I've used them, too. I just wanted to share what I'd read about the new onion bags. I was surprised to learn they're made of plastic now. I buy my onions loose, and hadn't really paid attention to how the newer bags are made. I have noticed plastic "burlap" bags at the feed store. That really blew my mind. I think you're just about the sweetest person sitting at the table. I always look for your posts and responses. I hope you know I'd never intentionally say anything to hurt your feelings. Comments (47)Thank you all so much for all this help. It's been so much fun reading and learning and planning, and I was eagerly looking forward to trying again, despite the the very real possibility I'd end up at the bakery. But now it seems I will have to go that route anyway. The shower is this Saturday, and things have changed around here very quickly: last week, my mother-in-law, who lives in assisted living near us, was diagnosed with uterine and possibly also ovarian cancer. She will have a hysterectomy this Friday. We are very happy she is able to have the surgery so fast, and the doctor thinks she will have an easy recovery. But needless to say, this changes everyone's schedules quite dramatically. We had to uninvite most of our 23 guests for Passover next week (I'm way behind on the cooking for that already due to not knowing how much I would need to make and doctor appointments) to vastly simplify all that, and of course there is no time in the schedule anymore for something like baking and decorating a onesie cake. So I'm just going to order something cute from the supermarket bakery. But as my friends are all starting to have grandchildren, I hope to have an opportunity to try again sometime in the future, and when I do, I will have saved all your great ideas and advice.
