Can I adjust this bread recipe? Update

I love Whole Foods' seeduction bread and want to try a copycat recipe, found this one:

I don't have any wheat gluten and don't have any other recipes that call for it, so my question is -- can I use bread flour instead of the all-purpose flour and skip the wheat gluten? If so, do I do an equal substitution of the bread and all purpose flours?
