Clear "gel" in spring onions

Something I've been meaning to ask for ages is about spring onions. Due to DH's sensitivity to regular onions, I use the green part of spring onions as a substitute.

When they are very fresh, as I chop up the long green leaves, a thick, clear gel is squeezed out. I figure it's part of the onion so I use it, but I've always wondered what it is.

Am I the only one this happens to, as I've never seen anyone else mention it?
