Help me recreate it?

I started with onions, garlic, and mushrooms, which I sauteed until they were dry (and for the mushrooms, a little crispy). There was cream involved, and white wine. I tossed in some protein, added it to pasta. Oh, and I tossed in some peas.

What herbs would you add? I probably would have added thyme considering there were mushrooms and peas.

It already had garlic, so didn't need a lot more than salt and pepper.

Probably would have added some flour to thicken it a bit. What sounds good to you?😉

Herb-wise, thyme or rosemary or dill. If you use heavy cream you should be able to reduce it with no need fo flour. Add the wine after cooking onion and garlic, boil it off then add the cream. I am sometimes roasting mushrooms rather than sauteeing. maybe a splash of soy sauce or tamari or worcestershire.

Probably basil. I wouldn't add flour. Agree with the cream.

And this is one I'd like to suggest. You need to use a Rice based, not Wheat based, noodle. Shrimp can be eliminated but they are so good. I also will add shredded Cabbage if I have some around. ASIAN SHRIMP AND RICE NOODLES 1# peeled and deveined cooked Shrimp Ã¯Â¿Â½ one half Cup Olive Oil 2 Tablespoons Asian Fish Sauce 2 Tablespoons Soy Sauce Zest and Juice of 2 Limes 2 Tablespoons Light Brown Sugar 3 Teaspoons Thai Garlic Chili Paste 1 Tablespoon Toasted Sesame Oil 6 Scallions, finely sliced In a small bowl, whisk to combine, reserve half to marinate the Shrimp. Toss the Shrimp with half the marinade. Place in covered container in refrigerator for at least an hour, or up to 24 hours. Cooked Rice Noodles 1 Carrot, shredded Snow Pea Pods, julienned 1 Cucumber, thinly sliced and julienned 1 Cup Cilantro Leaves Place Noodles, Carrot, Snow Peas, Cucumber and Cilantro in a large bowl, toss with the remaining dressing. Put on a large plate and top with the marinated Shrimp, garnish with Lime Wedges.

I have a bottle of Thai Sweetened Chili Sauce (for spring roll) that sounds like what you describe. The brand is Pantainorasingh. It's a translucent, sort of thick, orangy, shrimpy colored sauce with bits of carrot and things suspended in it. It's hard to tell from the pick on their site below but it is pretty translucent. Worldmom-beautiful family! You and your dh look like teenagers, still! I love the story about your table. We are following in your footsteps-needing a larger table (our 11th is due in August). I really like the RH tables, too, but they are out of my budget! :) Hopefully my dh will have time to build our table sometime in the midst of this remodel. Right now, we have the table that my FIL made that my dh grew up eating at. We almost fit at it still... Have you looked at finishing your table with Monocoat, like RH mentions? We used it on our walnut floor in the kitchen, and it is holding up very well-amazingly well considering the use and abuse it gets from our large famiy! I didn't think their clear oil did much for white oak, but they have many colors, too. We used chocolate on our floor. Enjoy your new table! I'm sure you will have many happy meals at it with your family!

Thyme comes to mind for me with mushrooms and peas. Just thinking of a pasta dish I make with chicken, mushrooms, peas, cream, thyme, pinch of nutmeg and parsley. Pretty much chicken tetrazzini-ish.

I might like tarragon with what you have.. Maybe some wine during the saute, before adding the cream. eta: I just reread and see you did already list wine.

A small pat of butter and a tBsp or two of tomato paste before adding the white wine. Can't really taste the tomato but does inhance the mushroom flavor. Finish with some of the pasta water. Just a 1/4 or half cup depending on your dish amount.

For a starchier water, a few small pastas like penne soaking in a 1/4 cup hot ketel water before you even start your prep. Restaurants use the same pot to cook their pasta. It gets very starchy during service. Often save some of that nights service in their cooler to begin the next nights sauces. Repeat.

I'd add sweet marjoram, but not everybody has that on hand. I always add a pinch of nutmeg to creamy, buttery things, since it seems to enhance that flavor. I'd also consider dill - and perhaps some Parmesan?

Sleevendog, thanks for the idea of making stach water out of starchy pasta! My pasta never sheds enough starch to be useful. I never thought of that. I'll use arrowroot or tapioca starch as a substitute, but it's a bother.

Thanks! Added thyme, Parsley, nutmeg, and Parmesan. Just go around was chicken and broccoli. Last time was smoked turkey and peas.
