lisa: Can you taste the chicken? Clair: I've never heard of putting lettuce in Chicken Salad ,either. Why don't you make the Chicken Salad and serve it on a piece of lettuce. The recipe is very easy. In the restaurant ,I boiled the chickens until cooked and saved the stock for soup. Take the breast (1 chicken) and cube them into small pieces. In a large enough bowl Add 1/2 cup of finely chopped Celery and Onions. Add your spices, Garlic Powder, Parsley, Rosemary and Basil. Sprinkle in some Parmesan Cheese. Add the Mayo and mix. Salt to taste. Some people put in hard boiled eggs. I use a lot of Mayo. You can use the Thighs etc. but I save that for Chicken soup. Any questions ? Ask !!! Lou

Most any fast food is heavy on salt. I've seen a number of copycat recipes and some are interesting. I always cut down on salt these days if I can. I like chicken salad. A grocery store here has a cashew chicken salad with grapes, celery, etc in it that's real good. I've pretty much quit making my own since that's so good and much easier, although it is quite spendy.

This is alte but delicious for any event. My neighbor gave me this recipe and I made it for a friends shower last sunner. It was the hit of the party! Everyone wanted the recipe. A little different, but very good. I used boneless chx breast. Millionaire Chicken Makes 4 main-dish servings 1 whole 2-to-3 pound chicken (or bone-in chicken breasts) 1/2 head iceberg lettuce (or other crisp salad green) Sauce A: 1/4 cup soy sauce 2 tablespoons honey 1 clove garlic, minced Sauce B: 3 tablespoons peanut or corn oil 2 scallions (green onions), chopped 4 nickel-size slices fresh ginger root, peeled and minced 1/2 teaspoon whole Sichuan peppercorns, slightly crushed 1/4 teaspoon crushed red pepper Garnishes: About 1/2 carton cherry tomatoes, for garnish 1 small can whole water chestnuts, for garnish Poach chicken in simmering water until done. Cool, remove skin and bones, and cut meat into bite-size pieces. Arrange over shredded lettuce on a large platter. Combine ingredients for Sauce A in a small bowl; mix well and let stand for at least five minutes. Meanwhile, combine the ingredients for Sauce B in a small saucepan; heat over low flame for about three minutes. Remove from heat and pour Sauce B into bowl containing Sauce A, mixing well. Pour mixture over chicken and lettuce. Garnish rim of platter, alternating cherry tomatoes and water chestnuts

Here is the LONG way to chicken salad.... Using a whole chicken, prepare chicken broth with your favotite seasonings. I use one medium onion, quartered, one medium peeled carrot, one stalk of celery with leaves, and salt and pepper to taste. Simmer until chicken is tender and broth is golden colored. Remove chicken from pot along with cooked vegetables, strain broth through cheesecloth, pour into old fashioned ice cube trays. Freeze. Then store broth cubes in freezer bags so you have a supply whenever you need chicken broth. Meanwhile, make your favorite cooked chicken recipe for dinner (chicken and dumplings, or chicken soup etc...), reserving enough chicken for the chicken salad. Then.... cube chicken, add some chopped hard boiled eggs, chopped celery, some chopped oinion and either green or red grapes, halved. If I have slivered toasted almonds, I sometimes add them. Salt and pepper to taste, add Miracle Whip or mayo. Serve on a bed of lettuce or on a fresh croissant. YUM! Told you it was the LONG way! Susan
