Looking for best chicken salad recipe
Comments (7)There's that dangerous word again: "best". So many chicken salads, so many opinions, so many personal tastes. This is one I found on-line a gazillion years ago and I've made it many times. It's been tweaked. I often add some cream cheese to this (I especially like "Better Than Cream Cheese") and turn it into wraps/rolls. CURRIED CHICKEN SALAD Serves 6 Ingredients 1 1/2 lb stewed chicken, chopped 1/2 cup mayonnaise 1/3 cup plain yogurt 5 tsp curry powder 1 Tbs fresh lime juice 1 tsp honey 1/2 tsp salt (optional or to taste) 1 tsp black pepper 1 medium yellow/brown onion, chopped 1 firm-ripe mango (about ¾ pound), peeled, pitted and chopped 1/2 cup salted roasted cashews, coarsely chopped Directions Whisk together mayonnaise, yogurt, curry, lime juice, honey, salt and pepper in a large bowl. Comments (3)This was first served to me at a mother/daughter luncheon when I was a teenager. I will be 54 this month, and it remains a favorite of mine. I think it is the curry powder that makes it special. EXOTIC LUNCHEON SALAD In a bowl, mix together the following ingredients: 1 1/2 cup mayonnaise 1 1/2 tsp. lemon juice 1 tsp. curry powder 1 1/2 tbsp. soy sauce Mix above well: In another bowl, stir together: 4 cups cooked and cubed chicken or turkey 1 - 5 oz. can water chestnuts, sliced 1 lb. green grapes 1 cup celery, diced 1/3 cup slivered almonds 1 small can crushed pineapple, drained 1 cup mandarin oranges, drained Mix all ingredients and dressing together. Cafe Nordstrom's chipotle lime dressing Prep time: 15 minutes Makes approximately 1 pint or enough for 8 servings 1/4 cup fresh lime juice 1/4 cup rice wine vinegar 2 teaspoons garlic,minced 1 tablespoon chipotle purée 3 tablespoons honey 1/2 teaspoon kosher salt 1/2 big bunch cilantro,chopped 3/4 cup canola oil In a blender, combine lime juice, rice wine vinegar, garlic, purée, honey, salt and cilantro. Blend together well. Then slowly add the oil to the blender as it is blending until it is fully emulsified. Remove from the blender and taste for seasoning. Refrigerate until you are ready to serve. Whisk well before tossing with the salad. Per serving: 210 cal.; 0 g pro.; 8 g carb.; 20 g fat (2 sat., 12 monounsat., 6 polyunsat.); 0 mg chol.; 120 mg sod.; 0 g fiber; 6 g sugar; 85 percent calories from fat.
