I'm looking for a chicken salad recipe. I would like one made with lettuce .

If you put lettuce in your chicken salad more than 5 minutes before serving, the lettuce will get limp and be slimy and awful.
I have heard of lettuce salads with chicken added, but never a chicken salad with lettuce mixed in. Is that really what you want?

Basic formula for good growing loam: 45% "dirt", 5% organic matter, 25% WATER, 25% AIR. As a beggar rather than a chooser, I've gotten used to taking any green matter I can haul, beg, or bribe (beer works nicely on the county crews) and suspect you're refining too much on that 5%. Please note that air and water constitute a full 50% of good soil. Get a bunch of those into what I know has to be compacted soil, with a little organic matter, and just watch what happens. This is alte but delicious for any event. My neighbor gave me this recipe and I made it for a friends shower last sunner. It was the hit of the party! Everyone wanted the recipe. A little different, but very good. I used boneless chx breast. Millionaire Chicken Makes 4 main-dish servings 1 whole 2-to-3 pound chicken (or bone-in chicken breasts) 1/2 head iceberg lettuce (or other crisp salad green) Sauce A: 1/4 cup soy sauce 2 tablespoons honey 1 clove garlic, minced Sauce B: 3 tablespoons peanut or corn oil 2 scallions (green onions), chopped 4 nickel-size slices fresh ginger root, peeled and minced 1/2 teaspoon whole Sichuan peppercorns, slightly crushed 1/4 teaspoon crushed red pepper Garnishes: About 1/2 carton cherry tomatoes, for garnish 1 small can whole water chestnuts, for garnish Poach chicken in simmering water until done. Cool, remove skin and bones, and cut meat into bite-size pieces. Arrange over shredded lettuce on a large platter. Combine ingredients for Sauce A in a small bowl; mix well and let stand for at least five minutes. Meanwhile, combine the ingredients for Sauce B in a small saucepan; heat over low flame for about three minutes. Remove from heat and pour Sauce B into bowl containing Sauce A, mixing well. Pour mixture over chicken and lettuce. Garnish rim of platter, alternating cherry tomatoes and water chestnuts

Per the Panera Bread Cookbook, which I borrowed from my local library today, it's 3/4 cup canola or vegetable oil, not 1/4 cup. Ginger St. John's posted recipe is otherwise correct, Peter Reinhart wrote the forward but the cookbook was written by the Panera Bread team. I make a cobbled version which has essentially the same ingredients, except I add about 1/2 cup water which lightens the dressing. It's still quite good, but not so heavy and calorie laden.

I am not adverse to prepared deli salads but I rarely buy them. I may just be too unimaginative or stuck in tradition but the already prepared salads rarely have the ingredients or seasonings that I prefer. IOW, I like my homemade versions better :-) This is particularly true for potato salad but also chicken salad, tuna or egg salad. And they are very simple to make so no hardship starting from scratch. My local grocery sells already shredded cooked chicken (from that day's rotisserie chickens that didn't sell) so I make chicken salad often. I usually do not add any fruit or sweet ingredients as that limits its versatility, preferring to dress chicken salad sandwiches with cranberry sauce as desired.

My SIL makes a salad w/ chicken. She cuts up romaine adds granny smith apples, dried cranberries (or fresh blueberries depending on the season) some candied nuts, and chunks of chicken. She uses either Ken's vidalia dressing or a poppy seed dressing. Really you could add anything, sliced red cabbage, cherry tomatoes, shredded carrots, chopped celery, strawberries, raspberries........ the list goes on.
It's a vey nice salad or can sub as a dinner.

lisa: Can you taste the chicken?

I've never heard of putting lettuce in Chicken Salad ,either.

Why don't you make the Chicken Salad and serve it on a piece of lettuce.

The recipe is very easy.
In the restaurant ,I boiled the chickens until cooked and saved the stock for soup.

Take the breast (1 chicken) and cube them into small pieces.
In a large enough bowl Add 1/2 cup of finely chopped Celery and Onions.
Add your spices, Garlic Powder, Parsley, Rosemary and Basil. Sprinkle in some Parmesan Cheese.
Add the Mayo and mix. Salt to taste.
Some people put in hard boiled eggs. I use a lot of Mayo.

You can use the Thighs etc. but I save that for Chicken soup.

Clair:
I forgot to add sometimes we Roast a Chicken and
use the Breast for the Salad. Also, at times we throw in
a couple tablespoons of chopped Tomatoes.
