Help! Expectations betwn grower and chef for special event dinner
Comments (4)I had a similar thing happen (at least we weren't hosting it). Local Historical Society wanted me to supply jams, jellies, pickles, etc. for Tavern Night (mid-19th century), I helped plan the menu and bought 10 lbs of pork roast (just a taste for 50 people) and then we got hit with a freak snowstorm, everyone lost power for days (we kept the freezer running with a generator) and the event was canceled. All the pickles were in the fridge, I didn't can them since the event was only a week or so away from when I was harvesting my peppers. We ate a LOT of pickled peppers for a while (and pork roast more than a few times over the winter). Just got notice they've rescheduled for June 8. I still have the jams and jellies, but have market so said I can't help that night (though I did help them revise the menu to a more seasonally-appropriate one), they'll have to pick up the jars earlier. At least they said they'd put out placecards with the flavors (and ingredients in case of allergy) when they dish them out (if I make up the cards, and I'll make sure I put my farm name on them), and I can stop by after market. Comments (14)Well, my favorite idea - cooking for them and then making a basket with booze & such got shot down fast. "I'm not going to cook for a CHEF!" said one of the participants. Oh well, we're back to square one. If you have any more ideas, please let me know. I'm guessing we're going to end up with gift cards simply because we won't be able to come to an agreement on anything else. Sweeby, We go to Damian's. We have seven attending and that's about the limit the table can accomodate. But I'm sure as little as two would be ok in there. However, if you're going to do it, get some friends to go with you. It takes up the entire evening and it's more fun with more people. IIRC the price is $75 + tax & tip. It might be slightly higher than that but I'm sure it's under $100. That does not include liquor of course. We end up spending somewhere around $130ish per person, that includes cocktails and wine. Although it's not a complete list, b4-u-eat.com has some chef tables listed, and you can google for more places that have them. I do highly recommend Damian's though. The food is fab. Comments (14)I've revised the menu significantly but need to keep the lamb chops. Here's the new menu followed by the recipe for the mac-n-cheese cups which might make it back into the menu in place of the clams...tho I could use a chicken item. Passed food Mini sausage quiche Pigs-in-blankets Baby lamb chops Scallops wrapped in bacon Clams Casino (I am still on the fence about these, but might make them a stationary item) Birds nest Fontina, arugula, and carmelized onion quesadilla wedges Mini Knishes Stationary Lionshead meatballs Shrimp cocktail Crudite with Caesar dip (one in the dining room and smaller trays in the other rooms) Sushi tray (still on the fence about this too) Cheese platter Hot dip in a chafing dish This will come out around 2 hours into the party: Cheese tortellini with Vodka sauce Green chopped salad Breads Mini Mac and Cheese Bites Source: My Italian Grandmother Ingredients: 1/2 lb elbow macaroni 1 1/2 tablespoons unsalted butter 1/4 cup freshly grated Parmigiano-Reggiano cheese 2 tablespoons all-purpose flour 3/4 cup milk 4 ounces cheddar cheese, shredded (1 packed cup) 4 ounces deli-sliced American cheese, chopped 1 large egg yolk 1/4 teaspoon smoked Spanish paprika (I used regular) Salt and pepper Directions: Preheat oven to 425. In a large saucepan of boiling salted water, cook the macaroni until al dente. Drain and run under cold water to stop the cooking process and to keep the macaroni from sticking to itself. Spray two 12 cup muffin tins with Pam and sprinkle half the Parmigiano cheese into the bottom of the cups. (Can also use mini muffin tins) In a large saucepan, melt the butter, then over medium heat, whisk in the flour. Cook for two minutes until boiling. Whisk in the milk and continue whisking until boiling, about 5 minutes. It should be nice and thick. Stir in the American and cheddar cheeses until melted. Off the heat, stir in the egg yolk and paprika. Fold in the macaroni. This is also a good time to taste and season accordingly. I like to add salt and a lot of pepper during this step. Spoon evenly into the muffin cups and sprinkle with remaining Parmigiano cheese. (I have decided to skip this step and put all the Parmigiano cheese into the bottom of the tins, I think it makes the bites a little too crunchy to have this extra cheese on top, but that's just our preference). Bake in the upper part of the oven for about ten minutes. Let cool for about 5 minutes so they don't fall apart. Use a spoon to remove them from the muffin tins....See MoreEaster menu vegetable?

As this act is (usually) performed in private, I can't see as how it would be a problem to anyone. It doesn't leave a lingering, offensives body odor, As garlic does. Now that is a whole 'nother story! It seems people will consume copious amounts of it, in public and privately, And reek of it for days. Are they concerned about the effect on people around them? Is it something people consider when preparing meals for guests? I often wonder about that when reading some of the recipes posted on this forum. Many really do seem to like to pile on the garlic!
