Cocktail Party for 60 - Menu check

DH just celebrated a milestone birthday. To properly celebrate we are having a group of about 60 at our home next month. It's a cocktail party and I plan to serve a number of hot/cold hors d'oeuvres that will be passed by servers and available at various stations throughout the house.

My original plan was to cater the whole thing myself (with some store bought items thrown in), but I'm now thinking to use a caterer for some of it. I've got the whole thing planned out over the next month, reserving the weekends for the items that can be made and frozen...and using the three days leading up to the party to make things that need to be served fresh.

I'm pretty comfortable with my Plan A menu (that's with me doing all the food) in terms of my ability to pull it off, however I don't want to be completely exhausted by party time, so its those things I am looking to offload.

I will have 3 servers, one chef, and a bartender. All the cooking/heating will be done in our friend's home next door, so my kitchen can be used as additional entertainment space.

Here's the menu with '?' against those items that I am willing to replace with a caterer's food or eliminate. Stationary items will not be done all at once...the pasta will be the final dish. What are your thoughts on the menu? For starters, I think I need a chicken option and clearly I need to pare down the passed items.

Food to be passed by servers:

Mini sausage quiche (made ahead, frozen, and reheated from frozen)

Mac-n-cheese in Parmesan cups (?)

Pigs-n-blankets

Baby lamb chops with mint jelly

Grilled scallops wrapped in bacon

Clams Casino (?)

Mini knishes (homemade, frozen, and reheated from frozen)

Birds Nests (Trader Joes's - vegetarian)

Mini rice balls with Marinara dipping sauce (Trader Joe's)

Bite-size mini burgers/rolls (?)

Mini crab cakes with some kind of sauce (?)

Stationary Items

Lionshead meatballs (Asian meatballs in currey/coconut milk sauce)

Shrimp cocktail

Crudite with Caesar dip

Cheese tortellini with vodka sauce

Green salad

Assortment of breads

Dessert

Napolean half sheet cake

Cookies
