Help!! Having White cabinets/ White quartz nightmares....

My head is spinning! I'm doing a total kitchen remodel and the cabinets are already ordered and ready to install. I have Wellborn Glacier White around the perimeter, which is a very bright clean white. I have Mink Gray, which is a warm gray, on the island. If I had it to do over again I would have chosen a slightly warmer White, but this is all new to me. I love the look of White quartz with subtle but visible veining. The problem is finding one that doesn't look dingy next to the countertops. My kitchen has Northwest exposure, so the natural lighting isn't the best. I love MSI Calcatta Verona, but the fabricator says it's too creamy. I also love Viatera Minuet, but I'm terrified to make a very expensive mistake. Viatera Lumina matches exactly, but I'm not having the same "love factor" as with other choices. Has anyone felt this same dread and then had it all look beautiful in the end? Pictures and advice most welcome!
