Cabbage will hold for weeks.

You could use some of the C to make Bihon Pancit. We love it and it's just as good or better left over. I usually try to use Napa cabbage if I can find some but any cabbage will work. Aldi rarely has Napa.

It's really good just steamed or sauteed as a veggie! Cabbage rolls? I always use it in place of lettuce on tacos.

I roasted wedges cabbage last night. Needed more flavor than I gave it but it had hope.

Steamed, braised, roasted even plain boiled.... if it’s a good cabbage. It’s a frequent side in our house all winter. Or in minestrone/pasta e fagioli.

Cabages last weeks in my crisper. I've been shaving off a few slices for weeks for slaws and salads. From a red and green giant cabbage monsters. Slice off the first slightly ugly edges, then slice some good salad slaw slices. The first slices go to the pups food blend---then good marinated slaw for the week of salad lunches.

I always get small cabbages because SO likes them but I don't. The way I cook it for him is easy. Fry a little bacon to render the fat. The crispy bacon itself is the cooks treat. To the bacon fat add a little butter and fry some onions for a few minutes. Then add the cabbage which has been cut into squares and washed. Fry for about 5 minutes,stirring occasionally. Then cover it with good chicken stock and season it with pepper. Simmer it to your liking. My SO likes it cooked to where all the stock is almost evaporated but many people don't like it that tender.

If you like stuffed cabbage and your small cabbage has big enough leaves for that, but you're not ready to make it, put your cabbage in the freezer. Freezing will soften the cells enough that it's pliable when thawed and you don't have to treat it with boiling water. And then it can wait until you want to deal with it.

Or make cabbage soup. In a 3 quart pot, fill halfway with good water,, cut the cabbage into wedges and dump them in, S&P, garlic or garlic powder, lemon juice (or vinegar in a pinch), a little sugar (or finely grated carrots), a couple cans of tomatoes (whole or diced, plus stewed), a couple each of onions and potatoes, soup bones or stew meat. Boil and simmer for a few hours. Really good!

You didn't say what kind of cabbage it is. You can make certain things with Napa cabbage that you cannot with Savoy or Red cabbage.

Lars, it was just a small green cabbage from the grocery store. Nothing special. I like Plllog's idea of freezing it. I'll give it a try!
