How do you gingerbread?

I was indulging in a bought gingerbread molded cookie--it was just right! Thin, hard basic glaze evoking memories of childhood, abundance of cloves (love cloves), a little give and more snap. This year I was thinking about trying some gingerbread construction. I've thought better of it (as in I do not need temptation!) but it's been ages since I made gingerbread gingerbread. That is, the kind that's not a cake and not a cookie and not a ginger blondie, but gingerbread! I'm much more likely to make the Betty Crocker Moravian ginger cookies goosed by my version of the spices (think cloves!). These are more cut, spiced molasses cookies, thin and snappy. My very favorite cookie...which really isn't gingerbread at all.


How do you gingerbread?

Hard cookies? Soft cookies? Gingerbread gingerbread? Gingerbread cake?

Fresh ginger, dried ginger or powdered?

Iced? Sprinkles/sugars? "Paint"? Dye (food coloring in the dough)? None?

What's your favorite spice(s) along with the ginger?

Flat? Lofty? Mounded? 3D?


Do you do construction, and if so, how does your building gingerbread compare in the eating?
