Comments (23)As a parrot-owner, I am very leary of any non-stick pans containing PTFE, which can be lethal to birds when overheated. I think I've tried every "green" non-stick pan on the market in the past 2 years. First of all, "green" can mean anything...PFOA-free, PTFE-free, the packaging is made from recycled paper, whatever gimmick the manufacturer wants to use to get your attention. Buyer beware! I bought a set of the original "Green Pans" with the "Thermolon" non-stick coating. They lasted a few weeks before the coating bubbled up and became completely non-non-stick. Waste of money. The best PTFE-free pans I've found are the ceramic-coated Cuisinart pans which come in either stainless steel or hard-anodized. I've had both lines for about a year and they've held up well. Unfortunately, neither line works with induction, so I'm back to the drawing board. I've yet to find an induction-compatible, PTFE-free, non-stick line of cookware. (The ScanPan CTX mentioned above does contain PTFE.) If anyone has found any, I'd be very interested to hear about it. Comments (34)cooksnsews and arley - I'm interested in whether your pans came out with uniform slick surfaces after your seasoning? I've gone through this with the deBuyer pans I bought as well as two carbon steel woks. I did the deBuyer pans on the stove and got a light brown discoloration which didn't have the slick feel a properly seasoned pan should have. Then I did all of them in the oven, using lard, and baking them at 425F for about an hour. They came out with a darker layer, but the first time I used one of the woks, cooking at high heat, the whole layer simply evaporated! I then redid both woks, using corn oil, in the oven. This time I baked them at 450F for about 90 minutes. They came out with a darkish surface, but it's not uniform. I've cooked with one of them and so far the layer seems to stay on. I may be home free with them, as I know once they're properly seasoned, they will get better with regular use. I tried reseasoning the deBuyer pans on the cooktop, using high heat and the corn oil, and I got a darker layer but I'm not sure if it will stay there. I used one of them to sear fish and a few dark flakes came off the bottom. I may have to do them again. I'm curious to know what your experiences were. Comments (52)Well, during our last home sale, we pretty much had to be there. Farm property, 50 hilly acres, 6 horses, 1 of whom bites, barn cats that were pretty much feral, 2 indoor cats I wanted to stay indoors. Place was on the MLS. I'd get 20 minutes notice they were coming, if that. Realtor would show up wearing a sundress and sandals or Sunday best suit to try to show 50 acres. DH ended up in the hospital with sunstroke after escorting potential buyers over the property in 95 degree weather. One realtor had had a heart transplant and basically never moved out of the shade of the barn. One was so morbidly obese he ran out of breath walking from the driveway to the house. Listing realtor tried to be there (he was young and in good shape), but couldn't always make it on a moment's notice. And why, oh why, do the buyers all show up with their undisciplined young 'uns? Hello!! It's going to be your house, you're paying for it, and it doesn't matter if 3-year-old Billy doesn't like it. Worst part was when they expected me to sit their kids while they looked the property over. I'm sorry...I don't have kids, didn't want kids, and don't want anything to do with your kids. Especially when they wanted to "pet the horsie" and, of course, the one they want to pet is the cute black and white, previously abused paint that will take their hand off at the elbow. Seller rant over. I don't mind the sellers being present. If I have a question I want an answer now, not a week from now and then only after I harp on it 16 times. Comments (63)We do the majority of our cooking in cast iron. We have 2 pans that were my husband’s grandmother’s. And 2 newer pieces we bought. My husband is a freak about them. The newer ones we seasoned when we first got them. Vegetable oil or canola oil and bake in the oven. Then use a lot! I have the lodge scrapers and use those and super hot water to clean. No soap. Maybe once in a while if I feel like it really needs a cleaning. When I do that I tell my husband because he will dry it and then wipe it down with some oil, his favorite now is coconut.
