Anybody roast potatoes in peanut oil?

I have some peanut oil to use, am making roasted potatoes for dinner and thought might try using the peanut oil instead of the de rigueur olive oil. What do you think - good or bad idea?

I prefer olive oil for roasting, but peanut oil would work fine. I used to use peanut oil for stir-fry and popping corn, but have since switched to avocado oil.

Peanut oil has a high smoke point so you can use it for just about anything, but it has a distinctive flavor which you may or may not like.

jimihendrix: Thanks, I will try the Valeccia this year. I make all my own jams and jellies, so I want to go one step farther than my grandparents and make the whole P.B.&Js right out the back yard. Some-day I may even try some wheat(that looks easy enough) and make the bread too. As far as the potatoes go, I will try some again, but every year when we close the cabin for the Winter, we go by a small farm market that sells potatoes,(white & red) for $8.00 for a 50lb bag. Maybe I'll just do the sweets. I bought the peanut-butter machine at an auction for $8. Its not quite as creamy as store-bought, but the flavor can't be beat!

Potato Skins with Peanut Sauce

My peanut sauce is a little different than the typical one. It might not be quite right for an appetizer dish like potato skins, but would make an AWESOME potato stew. The sauce was invented by my friend Carolyn. I use it a lot on pasta. Carolyn's Tahini/Peanut Sauce 1 can white beans (cannelini or garbanzo beans are the kind I use, but I think any kind of white bean would be fine.) 6 large cloves garlic, pressed (I use less!) 2 TBLSP fresh ginger, grated 2 cups fresh cilantro (basically one bunch) 1 TBLSP chinese toasted sesame oil 1 TBLSP hot chili oil or 1/4 tsp. cayenne in with 1 TBLSP sesame oil 1/2 cup peanut butter or tahini 1/2 cup soy sauce (I use low sodium soy sauce) 2 TBLSP sugar 3 TBLSP rice wine vinegar or rice wine (I guess you could sub dry sherry. I love rice wine vinegar in salads so I always have it on hand. Could also maybe sub a little less cider vinegar if that's all you have) Put all this stuff in the food processor or blender and process until smooth. Garnish with chopped cucumber, scallions and toasted sesame seeds or chopped roasted peanuts. Yum deluxe, particularly if you are a vegetarian. And oddly enough, the uber picky kids like it. Maybe 'cause it's kind of sweet and sour.

Haven't made this in almost 10 years, but it sure was good when I did make it! Peloponnesian Pot Roast Ingredients 2 1/2-3 pound Beef pot roast 8 cloves garlic-cut in half Salt & pepper to taste 2 tablespoons cooking oil Hot cooked spaghetti 3 cups tomatoe sauce 2 tablespoons brown vinegar 1 teaspoons ground nutmeg 6-8 whole cloves 1/2 teaspoons ground cinnamon 1/2 teaspoons ground allspice Method Make slits in top of roast with tip of sharp knife; insert garlic halves into slits. Sprinkle roast with salt & pepper. In large skillet, brown meat on both sides in hot oil. Take meat from skillet & put into small roaster. Combine tomato sauce, vinegar, nutmeg, cloves, cinnamon & allspice. Pour mixture over meat in roaster. Cover and roast at 350 degrees for about 1-1/2 hours or until meat is tender. Remove meat to cutting board; keep warm. Bring juices in roaster to boiling; boil, uncovered, about 5 minutes or until liquid is reduced a bit. Remove the cloves from the sauce. Remove the garlic from meat, if desired. Cut meat into serving portions & serve over spaghetti with a little sauce over the top

Ideas for 2 Cups roast duck broth?

dcarch — thank you for that good suggestion. I got to thinking about this beforeI spotted your post — I might make the mistake of obscuring the flavor of the duck broth if I get carried away. I can always do that with more common broth. Since I only have a couple (2-4) of cups of duck broth, maybe I will (this time) limit the ingredients after I taste the broth for balance and salt. I think that I will defrost and use one half of the duck breast — pan fry skin side down, crisp; then turn over and cook other side for a minute. Tent and rest, thenI can slice and put the slice duck close together in with three noodles, broth, green onion and maybe a very small amount of fresh toasted sesame oil. Then I will slurp it up noisily. Now all of your responders have given me some ideas for how to best enjoy some roasted lobster stock. Use it for ramen! I’ve made beef pho a few times — lots of goodies to get a deeply flavored stock. Not as good as the local Vietnamese place. I have to limit that because it is so high in sodium (which, apparently in older individuals, may contribute to stiff heart and vessels. Too bad, I could have pho daily. This duck ramen will not be as rich in sodium. Thanks again?

I would roast them in any oil or fat with a high heat tolerance but the very best flavour is goose fat.

I usually use peanut or canola oil for cooking. It works great for roasted potatoes.

No. I only use clean cold-pressed or expeller-pressed avocado and olive oil naturally refined without chemicals and high heat.

I just rub a tBsp or less on potatoes, lighly salt and into the oven.

I've never purchased duck fat. The rare occasion we roast a duck i will add a layer of new potatoes under the duck---good but so greasy.

One goose produces several pints of fat. After christmas I have a few boxes iin the freezer. I've never bought it, or duck fat, separately.

That makes sense. I've not roasted a goose in years. Duck has been a few year. One menu item i order out. I did save the duck fat but kept forgetting i had it in the fridge. Same with a recent purchase of ghee. A very good high heat ingredient. It is good until apr 2022. Very rock hard when cold so i would have to plan ahead and let it come to room temp.

No, it does not need to be in the fridge(?), but it would get lost in the pantry or cuppard or until i get used to using it. Maybe the holiday month i'll use it.

I don't like the flavor of peanut oil - it is definitely not neutral. I prefer to use avocado oil or grape seed oil, and I always have one of those on hand but never peanut oil.

I like duck fat also and use that when I make tamales instead of lard. I'm sure it would be good with potatoes as well.

I can't say I've ever roasted anything in duck fat, but I do enjoy a good roast duck every now and then -- will have to remember to save the grease next time around.

I went ahead and used the peanut oil. Meh. Not bad, but I prefer the richer flavor of olive oil with the potatoes. The peanut oil sure is good for popcorn, though (which is the reason I bough it, since I couldn't find any safflower oil at the grocer).

Not all peanut oils have a peanut flavor. I used LouAna for years. It's a very neutral tasting peanut oil.
