patchwork flooring in open design home

We would like to replace flooring in open-design home. The foyer has marble tile, office and DR have unmatched hard wood, kitchen and halls have ceramic tile, and carpeting in FR area, BRs, and LR area. The tile and marble were installed on top of cement so the floors levels vary making transitions awkward. Should we replace with all one material (wood or engineered) or keep some carpeted and/or marble (different color)? Kitchen needs to be updated, too. We would like to keep footprint but would like to replace granite, backsplash, & cabinet doors. Where do we begin?
