What's your favorite comfort food
Comments (15)This thread reminded me of a time long ago, a cold, foggy, drizzly day in early May, in Bar Harbor. Thoroughly chilled from camping out and walking around slick Acadian rocks, late morning, we walked into a small restaurant on Main Street, ordered coffee and chose a table near the fireplace to warm up. The restaurant was nearly empty, being between breakfast and lunch times. On the menu was New England Clam Chowder, sounded good and warm and filling, so we each ordered a bowl. Enjoying the coffee and warmth, some time went by. Had some more coffee. We certainly had nowhere to go that would be better. Finally the waitress arrived with our chowder, apologizing for the delay. She explained that the chef had to shuck the clams and prepare the broth. When I looked down to my bowl, I was amazed to see it chock full of fresh long neck Ipswich clams, you know...the ones with the succulent bellies and chewy necks...surrounded by the creamiest, buttery ambrosia of a broth...not thick or starchy, but just thick enough to coat the spoon. Small chunks of potato, onions and parsley just accented the dozen or so whole tender clams lazing in the steaming bowl. That's real clam chowder. Well worth the wait. In fact I've waited maybe 30 years, ordered clam chowder many times at many restaurants since, but have never had anything even close to that experience. Thanks for bringing back that memory....See MoreOn the hunt for an acid/sour/citrus flavour
Comments (9)I am trying to determine if Super Sioux, Limmony, Tangerine and Druzba are acid/tart/citrus flavour tomato types. If anyone can help I'd appreciate an opinion. ***** Speaking just to the varieties you listed without making suggestions for other varieties: Super Sioux, I haven't grown Limmony I trialed for SSE when it first came from the former USSR and as with most varieties that are supposed to have some citrus taste that I've grown I don't find it does. Tangerine, I do find to be a bit on the tart side but not as tart as many others I've grown. Druzba, definitely not tart or acidic and as a general comment I think you really mean a variety that has a strong or aggresive taste since almost all tomatoes that have been tested have about the same pH. Comments (18)WalnutCreek, I'm also looking for vinegar with a higher percentage than 5%. The closest I've found --online-- is a gallon of 6% vinegar from Walmart, but they don't carry it in the store--it's called Cleaning Vinegar ($3.44/gallon), it has to be ordered, and the shipping cost is outrageous. I've read that you can make 5% vinegar more concentrated by boiling it--the water component that dilutes the vinegar to 5% will be lost in steam, and what you'll have left is a concentrate at a higher percentage that 5%. I'm not sure how accurate that information was, though, and I'm sure there are some safety considerations, too (like, don't inhale the steam!)....See MoreAlex, what is sour grapes?
Comments (23)Personally I wish I could find a job where I was just the perfect natural fit for the task and the money rolled in to me doing what I was naturally good at. He's livin' the dream! Would that all skills and talents could be so well rewarded! And that explains the sour grapes. I imagine it applies to more than just Jeopardy in our society today. Not his or the game show's fault. I can't access the article, I would have to pay and I'm maxed out on media expenditures....See MoreCA Kate z9
