Remodeling kitchen in new house. Need help with floor plan

Hi, we just bought a house that has a small kitchen. We are planning to remodel the kitchen, so that we'll have more storage and counterspace. We are thinking that we might have to knock down the load-bearing wall between the kitchen and dining room. Any suggestions/recommendations of the layout?

Things we are unsure of:

  • Flooring. We are putting hardwood floors in the first floor. Should we extend it to the kitchen too? If not, where is the cut off point for tile in the kitchen in the new layout we are considering
  • Orientation of the island
  • Dead space near the bay window
  • Do we need to get an architect or structural engineer to remove the load-bearing wall? So far, we have only spoken to framing carpenters
