Kitchen cabinet dilemma

My husband and I are overconstrained on kitchen cabinet selections. I need help weeding out choices. We beautiful #1 quality red oak floors that we will refinish to their natural state - they've darkened and yellowed in 12 yrs. We now have honey oak cabinets and are considering replacing with white oak, maple or cherry. We have LOTS of light - two windows in the kitchen and a series of windows in the rest of this open concept room. My original idea was to do natural maple on the cabinets and do a darker blue stain on the island. My husband is worried about the yellowing, which EVERY designer has mentioned and discouraged us from using maple. We are now considering white quartersawn oak or cherry. My husband likes cherry but I think it will get too dark. It seems a bit ridiculous to replace oak cabinets with more oak as our original plan was to minimize the oak look in our home. My husband hates soft woods so he refuses to consider Alder. I need some ideas! Thank you.
