    Crust

Butter, Lard, Shortening or Combo? - none. I’m totally intimidated by the rolling out of pie crust

Cookie or Pastry? - depends on the filling

Rolled or Pressed? - if I can make a pressed crust, I’ll make pie crust

    Egg or no egg?

    AP or Pastry flour?

Food processor, pastry blender, fork or fingers? - if making a pressed crust, I prefer using a food processor

    Roll on flour or plastic?

    Shattery flaky or really thin?

    Vinegar/Vodka or nothing?

    Ball or disk?

Fancy edges (twist, scallop, etc.) or plain/fork?

    Top crust or Lattice/shapes?

    Filling

Fruit or cream/curd/custard? one of the “Cs”

If fruit, berry, tree fruit or stone fruit? Fruit but I’m more of a cobbler fan than a pie fan; I’m not a fan of nuts

If no fruit, cream, curd, custard or other?

Meringue or whipped cream? Meringue. I really do not like whipped cream.

Ice cream, cheese, hard sauce, compote or bare? Most likely bare, but there are exceptions depending on the filling.

Tart or sweet?? Sweet. Tart hurts.

Solid bits or smooth and jammy?

    Sugar or honey/molasses/sorghum?

Booze or teetotal? Depends. Booze is okay if it enhances the flavor

Hipster herbs, nuts or seeds (as accents not the main flavor)?

Served warm, room temperature or cold?

Glaze/goo or just what comes from the fruit?

If not fruit, with lumps (coconut, cocoa nibs, etc.) or smooth?

Sugar topping or not (powdered or baked on)?

Tell us your favorite pie or two? Chess pie, Lemon Icebox Pie using recipe from Eagle Brand Condensed Milk can, Chocolate Meringue Pie, Chocolate Fudge Pie, Milk Bar’s Crack Pie.

    Friday's Trivia Quiz

    Q

In elementary school we were forced to learn a song titled "Fifty Nifty United States" that contains as part of the lyrics an alphabetized list of the states. So I can, to the day, recite all of the states from memory, but only in alphabetic order, and only in a strange sing-song-y cadence. As a test I just wrote down all of the states names, and tried to fill in the capitals for them, and got 50 out of 50 although I misspelled the capitals of Maryland and North Dakota, and I guessed for Tennessee.

There are actually a billion answers. Mosquitoes are the "animal" that kills the most people. Falling down stairs and out of bed actually kills more people than sharks. Bees, horses, ladders, traffic intersections... Coconut is probably the most surprising. BIG grin!

......... dance. Sing. Iron. I make it look worse than before. Do directions. It's amazing I can make it off our street. Bake well. Fry things. Learn other languages. Do math. Work the DVD, Netflix, etc. I can't watch movies unless DH or DD are home. Paint walls/trim. I mean, I can, but it's best that I don't. I get impatient and sloppy. Clean windows well. Ditto ovens. Use a flat iron on my hair. I end up looking like the Cynthia doll on Rugrats. Listen to country music. I'd rather stab my ears with ice picks. Use a drill well. I'm dangerous with it. Stay back. Find good deals--coupons, credit card rewards, miles, etc. I just can't figure it all out. I know people who are all, "I earned a free trip! I got $120 worth of groceries down to $11!" TEACH ME YOUR WAYS. Pronounce certain words. Apocalypse, abominable, and so on. I get the letters mixed up, much to the amusement of family and friends .... and dashed any hopes of public speaking. Have more confidence in myself. I'm hard on me.

Sugar topping or not (powdered or baked on)? No sugar on top - egg or milk glaze only.

I don't make as many pies as I used to because I do not have that many people to share them with anymore. The ones I make the most are lime, Bavarian Cream (which is a custard), apple, and cherry. I also make a lot of tarts with lemon curd, in case you consider those to be pies. I put fruit/berries on top of those but never an apricot glaze, as I do not like apricots. No one complains.

When someone sends me pecans, I make pecan pie, but that is not so often anymore. I guess I could buy pecans, but I was used to getting them for free, since my parents had pecan orchards.

It's not on the quiz but I also make a great whole wheat crust, very tasty, rolled very very thin.

    Crust

    All Butter

    Pastry

    Rolled

No egg (except for gluten free, and that only for those with real gluten issues)

    AP

Food processor (or fingers if I'm doing Stella Parks)?

Roll on plastic wrap, top and bottom. Much easier to handle and move.

Really thin. I don't even like eating shattery. The Stella Parks is very flaky, but holds together.

I've tried both vinegar and vodka, and don't see a difference, so I don't use either.

Ball unless it's going to be chilled for a really long time, when I'll do disk so it warms more quickly and easily.

Fork edges, except for cream or custard pies, which is usually the annual obligatory pumpkin.

Top crust, but I'm trying to learn shapes and sculptural.

    Filling

    Fruit

    Tree fruit

Custard--but more likely to use it, or frangipani in a tart

    Meringue

    Bare

    Tart (flavor--low sugar and tangy)

Solid bits or solid slices of fruit

    Sugar

    teetotal

Hipster herbs, nuts or seeds (as accents not the main flavor)? Agree with Lars: NO

    Cold

Just the juice from the fruit

If not fruit, i.e., custard/curd/cream, smooth

    No sugar on the outside

Tell us your favorite pie or two? Favorite pie of all is Mom's Apple Pie, which she learned as a teen from the neighbor lady who usually didn't have much use for her. Not much sugar, but macerated for a long time, slices intact. Cinnamon and a lovely tart flavor. Usually Granny Smith combined with something like Pink Lady or Honeycrisp. Variation, put a half pint of blueberries on top of the apples.

Other favorites, both to make and eat are fresh fig pie with ww spiced crust, Lindac's rhubarb with meringue top, and blackberry if I can get the right kind of berries.

Favourite pies are savoury. Hot, like a steak or kidney or cold as in a wonderful pork pie, with hot water crust pastry.

Apple pie, nice and simple would be next!

Bar none, my favorite is an oatmeal crust, chocolate pudding type filling, and topped with meringue.

After that all of them. I like cherry, apple, blueberry, lemon meringue, key lime, strawberry, fudge... I could go on and on. There's a pie I make that has a cream cheese crust with chess pie filling. That's good stuff right there. Mmm.

Roll on flour or plastic? Flour

Shattery flaky or really thin? Flaky

Vinegar/Vodka or nothing? Ice water except in the "never fail" mentioned above

    Ball or disk? Disk

Fancy edges (twist, scallop, etc.) or plain/fork? Mostly fancy, sometimes plain

    Top crust or Lattice/shapes? Both/either

    Filling

Fruit or cream/curd/custard? Fruit is my favorite but I'll eat nearly any of them

If fruit, berry, tree fruit or stone fruit? Stone fruit like peach or cherry

If no fruit, cream, curd, custard or other?

Meringue or whipped cream? Depends on the pie

Ice cream, cheese, hard sauce, compote or bare? Bare

Tart or sweet?? right in the middle

Solid bits or smooth and jammy? Depends on the pie

Sugar or honey/molasses/sorghum? Depends on the pie

    Booze or teetotal? Definitely teetotal

Hipster herbs, nuts or seeds (as accents not the main flavor)? Nope, not "hipster"

Served warm, room temperature or cold? Any

Glaze/goo or just what comes from the fruit? No goo or gelatinous substances
